Introducing a recipe for chewy and delicious braised sweet potatoes made with sweet, floury sweet potatoes. The sweet potatoes I bought for dakgalbi turned out to be so incredibly tasty that I transformed them into this wonderful side dish, perfect for both meals and as a delightful accompaniment to a cold beer! It’s easy to make and loved by the whole family, so give it a try!
Main Ingredients
- 4 sweet potatoes (approx. 430g)
- 1 Tbsp finely chopped green onion
- 1 Tbsp sesame seeds
- 2 Tbsp cooking oil
Braising Sauce
- 200ml water
- 1 Tbsp sugar
- 3 Tbsp soy sauce
- 2 Tbsp corn syrup (or other liquid sweetener)
- 1 Tbsp sesame oil

Cooking Instructions
Step 1
Thoroughly wash the 4 sweet potatoes (approx. 430g) under running water using a vegetable brush to remove all dirt from the skin. Since you’ll be cooking them with the skin on, it’s important to clean them very well.
Step 2
Cut the washed sweet potatoes into bite-sized pieces, about 2-3cm thick. Cutting them too small can cause them to break apart during cooking, so aim for a moderate size.
Step 3
Place the cut sweet potato pieces in a bowl and soak them in cold water for about 10 minutes. This step helps to remove excess starch, allowing the sauce to penetrate better and preventing the sweet potatoes from becoming mushy.
Step 4
Drain the sweet potatoes that were soaked in cold water and place them in a colander to remove all excess moisture. Ensure they are dry, as remaining water can cause oil to splatter when frying.
Step 5
In a small bowl, combine all the braising sauce ingredients: 200ml water, 1 Tbsp sugar, 3 Tbsp soy sauce, 2 Tbsp corn syrup, and 1 Tbsp sesame oil. Stir well until the sugar is dissolved to create the sauce mixture.
Step 6
Heat 2 Tbsp of cooking oil in a pan over medium-low heat. Add the drained sweet potato pieces and stir-fry for about 3-5 minutes until they turn a light golden brown. This process helps to enhance their natural sweetness and improve the texture.
Step 7
Once the sweet potatoes have a nice golden hue, pour the prepared braising sauce into the pan. Keep the heat at medium and be mindful to prevent the sauce from burning.
Step 8
Bring the sauce to a simmer, then gently stir the sweet potatoes with a spatula to ensure they are evenly coated with the sauce. Continue to simmer for another 5-7 minutes, or until the sauce has thickened and glazed the sweet potatoes. Avoid using high heat, as this can burn the sauce; adjust the heat as needed.
Step 9
Transfer the cooked braised sweet potatoes to a serving plate. Sprinkle with 1 Tbsp of finely chopped green onion and 1 Tbsp of sesame seeds for a visually appealing and flavorful finish. Your delicious braised sweet potatoes are ready!
