Summer Special! Red Bean Pudding Recipe Capturing the Authentic Taste of Patbingsu

On these hot days, we all crave ice cream, don’t we? That’s what inspired me to think of Patbingsu (Korean shaved ice dessert) and transform its delightful flavor into a pudding. I was genuinely surprised by how incredibly delicious this Red Bean Pudding turned out, tasting just like a bowl of Patbingsu! I’m sure this will be a summer favorite.

Ingredients
  • 300ml Milk
  • 50g Sweetened Condensed Milk
  • 3 sheets Gelatin
  • 5 scoops Vanilla Ice Cream
  • 200g Red Bean Paste (Anko)
  • 100g Injeolmi (Korean Rice Cake)
  • 30g Almond Tuile
  • Chocolate Syrup, to taste

Cooking Instructions

Step 1

First, to create the smooth pudding base, measure out 300ml of milk and 50g of sweetened condensed milk.

Step 2

For that perfect jelly-like texture, soak 3 sheets of gelatin in cold water for about 10 minutes, or until they become soft and pliable. Ensure they are fully softened.

Step 3

In a saucepan, combine the milk and sweetened condensed milk. Gently heat over low heat, just until warm to the touch. Avoid boiling; the key is to warm it through.

Step 4

Once the milk mixture is warm, remove it from the heat immediately. Add the softened gelatin sheets and stir until they are completely dissolved and no lumps remain.

Step 5

Pour the prepared milk base into your pudding cups or desired containers. Then, place them in the refrigerator to chill and set for about 4 to 5 hours, until the pudding is firm.

Step 6

Once the pudding has set, take the cups out of the refrigerator. Now, it’s time to add the delicious red bean paste (anko) on top of the firm pudding base.

Step 7

Next, artfully arrange the almond tuiles around the edges of the red bean paste, adding a lovely crunch and visual appeal. Think of it like decorating a delicate pastry.

Step 8

Now, carefully place a generous scoop of vanilla ice cream right on top. The combination of cool ice cream with the pudding and red bean is truly divine.

Step 9

Beside the ice cream, place a few pieces of chewy injeolmi (Korean rice cake) that have been cut into bite-sized portions. The classic pairing of red bean and injeolmi is always a winner!

Step 10

Finally, for a touch of indulgence, drizzle some chocolate syrup over the top as a garnish. Your delightful Red Bean Pudding, reminiscent of Patbingsu, is now complete! Enjoy every spoonful!
