Sweet Potato Curry: A Wholesome One-Bowl Meal

Nourishing Sweet Potato Curry for a Complete, Delicious Meal

The sweet potatoes I brought home before Chuseok weren’t in the best condition, so I decided to quickly make this comforting Sweet Potato Curry. It’s a fantastic way to use them up while creating a satisfying and nutritious meal.

Main Ingredients
  • 1.5 Onions, roughly chopped
  • A small piece of Carrot, diced
  • 3 Red Potatoes, washed and cut into large chunks
  • 1 handful Dried Shiitake Mushrooms, used without rehydrating
  • 3 Sweet Potatoes, peeled and cut into large chunks
  • 1 Bell Pepper, deseeded and roughly chopped
  • 1 packet Curry Powder (choose your preferred spice level)

Cooking Instructions

Step 1

Start by heating a generous amount of oil in a pan. Add the roughly chopped onions and sauté until they become translucent and fragrant. Once the sweet aroma of the onions is released, add the diced carrots and red potatoes, sautéing them together to enhance the vegetables’ flavors.

Step 2

At this stage, add the handful of dried shiitake mushrooms. You can use them directly without rehydrating; they will still impart plenty of flavor. Then, add the star of our dish, the sweet potatoes, cut into generous chunks, and sauté for a short while with the other vegetables.

Step 3

Once the vegetables are lightly sautéed, transfer them to a pot. Pour in enough water to achieve your desired curry consistency. Bring the mixture to a boil over medium-high heat.

Step 4

Simmer until the potatoes and sweet potatoes are tender. When the potatoes are cooked through, stir in the curry powder. Whisk thoroughly with a whisk or spatula to ensure there are no lumps. Reduce the heat to low and let it simmer gently.

Step 5

Finally, add the roughly chopped bell pepper. This will add a vibrant color and a pleasant crunchy texture. Be careful not to overcook the bell pepper; just let it simmer for a brief moment.

Step 6

Continue to simmer for a few more minutes until all the flavors meld together, creating a delicious curry. Serve generously over warm rice for a hearty and satisfying meal!
