Make a nutritious pot rice with sweet corn, which has 2-3 times more sugar than regular corn and is sweet enough to eat raw. Sweet corn, with its crisp texture like fruit, is also delicious when cooked. Since boiling it in water can remove its sweetness, it’s recommended to steam it lightly in the microwave or a steamer. This recipe is for Staub pot rice, allowing you to enjoy delicious rice and sweet corn together. Ingredients
- 2 Sweet Corn cobs
- 2 cups Rice (approx. 360g)
- 400ml Water
- 1 piece Dried Kelp (approx. 5x5cm)
- 1/2 tsp Salt
Cooking Instructions
Step 1
First, carefully peel off the outer husks and silk from the sweet corn cobs.
Step 2
Rinse the corn cobs thoroughly under running water.
Step 3
Using a knife, carefully slice off the kernels from the cob. You can do this by standing the corn upright and cutting downwards, or by laying it on its side.
Step 4
Rinse the rice until the water runs clear, at least 5-6 times. Drain the rinsed rice in a sieve and let it soak for 30 minutes. Ensure all excess water is drained.
Step 5
Dissolve 1/2 teaspoon of salt in 400ml of water, which will be used as the cooking liquid for the rice.
Step 6
In a Staub Asian bowl (20cm), spread the soaked rice evenly at the bottom.
Step 7
Arrange the sliced sweet corn kernels and the piece of dried kelp over the rice.
Step 8
Add the corn cob to the pot as well. Cooking with the cob will help infuse the rice with more of the corn’s sweetness and flavor.

Pour all the prepared salted water (400ml) into the pot. Maintain a 1:1 ratio of rice to water for best results.

Place the pot over medium-high heat and bring the water to a gentle boil.

Once the water begins to boil, immediately cover the pot with the lid, reduce the heat to low, and let it simmer for 15 minutes.

Turn off the heat and let the pot rest, covered, for 8 minutes to allow the rice to steam and fully cook. This resting period ensures the rice is fluffy and perfectly done.

After steaming, carefully remove the corn cob. Gently fluff and mix the rice with a spatula before serving. For an extra touch of richness, you can add a knob of butter to your serving.
