  • 2 large, sweet pears
  • 1/2 fresh green onion stalk

Seasoning Ingredients
  • 2 Tbsp fine gochugaru (Korean chili flakes)
  • 1 Tbsp minced garlic
  • 3 Tbsp anchovy sauce
  • Sesame seeds, to taste

Cooking Instructions

Step 1

First, peel the pears thoroughly. While you can make this kimchi with the skin on, peeling it results in a softer, cleaner texture.

Once peeled, cut each pear into 4 wedges. This makes it easier to remove the core.

Carefully use a knife to remove the core and seeds from each pear wedge. Removing the seeds ensures a more pleasant eating experience.

Cut the cored pears into bite-sized cubes, about 1.5cm to 2cm in size. This size is perfect for maintaining a crunchy texture in the kimchi.

Wash the green onion and thinly slice it diagonally, including both the white and green parts. Slicing it thinly helps the seasoning adhere well.

In a large bowl, combine all the cubed pears. Add all the prepared seasoning ingredients: 2 Tbsp gochugaru, 1 Tbsp minced garlic, and 3 Tbsp anchovy sauce.

Step 7

Gently mix everything together with your hands, ensuring the seasoning coats the pears evenly. Be careful not to mash the pear pieces; a gentle mix is key. Stir until the color is uniform.
