Tart Base Ingredients
  • 5 Digestive biscuits
  • 3 Tbsp unsalted butter
  • 2 Tbsp sugar
  • 3 Egg yolks
  • 1/2 slice bread
  • 10ml milk

First, we’ll prepare the tart base. Place 5 digestive biscuits into a resealable plastic bag. Use a rolling pin or the bottom of a cup to crush them into very fine crumbs. These cookie crumbs will form the excellent foundation of your tart.

Take 1 tablespoon of the 3 tablespoons of unsalted butter and melt it in the microwave. Heat in 30-second intervals, for a total of about 1 minute, until fully melted. Be careful not to overheat the butter.

Pour the melted butter into the finely crushed digestive biscuit crumbs. Mix thoroughly with a fork or spatula until there are no lumps and everything is evenly combined. It should have a texture like damp sand; this even mixing is key.

Step 4

Now, let’s form the tart shells. Place the cookie mixture into a paper cup and use a small shot glass (inverted) to press down firmly in the center, creating a shell shape. These will be your individual tart molds. Microwave the formed shells for 1 minute, then repeat for another minute (total 2 minutes). Afterward, place them in the refrigerator to chill and firm up.

Step 5

It’s time to make the tart filling. Place 1/2 slice of bread on a plate and pour 10ml of milk over it. Ensure the bread soaks up the milk evenly without becoming overly soggy.

In a bowl, combine 2 tablespoons of softened unsalted butter (at room temperature) with 2 tablespoons of sugar. Using a hand mixer or whisk, beat them together rapidly until they form a light and creamy mixture, similar to whipped cream. Incorporating air at this stage is important.

Add the milk-soaked bread to the creamed butter and sugar mixture. Process again with a hand mixer or whisk until everything is smoothly blended into a creamy consistency. The bread should be completely incorporated.

Finally, add the 3 egg yolks one at a time, mixing well after each addition. Each yolk will contribute to a richer and more luscious texture. Once all yolks are incorporated, your delicious tart cream is ready.

Transfer the cream to a microwave-safe bowl. Microwave in 30-second intervals, stirring well between each interval. This process helps to thicken the cream to a wonderfully smooth and dense consistency. Approximately 1.5 minutes total is usually sufficient.

Remove the thickened cream from the microwave and place it in the refrigerator to chill completely. Chilling the cream will enhance the tart’s overall flavor and texture.
