Ingredients
- 1-2 kg fresh cherry tomatoes (choose ripe ones)
- 3-4 Tbsp oligosaccharide (adjust to taste)
Cooking Instructions
Step 1
Begin by thoroughly washing the fresh cherry tomatoes under cold running water. This ensures any dirt or debris is removed. Once cleaned, place all the cherry tomatoes into a pot or a deep pan.
Step 2
Set your stovetop to medium-high heat and begin to slowly cook the cherry tomatoes in the pot. Starting on medium-high heat, rather than high heat, helps prevent the tomatoes from bursting or burning too quickly.
Step 3
As the tomatoes start to soften, use a spatula to gently mash them. The cherry tomatoes release a significant amount of their own juice, so there’s no need to add any extra water. At this stage, add about 3 tablespoons of oligosaccharide to sweeten the jam, adjusting the amount based on the quantity and natural sweetness of your tomatoes. You can always add more later after tasting.
Step 4
Reduce the heat to medium and let the mixture simmer slowly for at least 20 to 30 minutes, stirring occasionally with the spatula and continuing to mash. Cook until the mixture has thickened considerably and most of the liquid has evaporated. You’ll know it’s ready when there’s very little liquid remaining. Then, turn off the heat.
Step 5
Allow the cooked cherry tomato mixture to cool down slightly in the pot. It’s important not to put extremely hot contents into a blender, as it can be dangerous. Once the steam has subsided and the mixture is warm to the touch, carefully transfer it to a blender.
Step 6
Blend the mixture until it is completely smooth and creamy. Processing it until there are no chunks will result in a jam sauce with a smooth texture, similar to commercial ketchup. This step is key to achieving a refined jam.
Step 7
Pour the finished cherry tomato jam into sterilized glass jars. Once filled, let the jars cool down completely before sealing them tightly with lids. Store the jam in the refrigerator.
