Ingredients
- 2 cups short-grain rice
- 1 Chodang sweet corn (medium size)
- 2 cups water
- 15g unsalted butter
- 1 pinch of salt
- 2 stalks scallions (for garnish)
Cooking Instructions
Step 1
Prepare your Chodang sweet corn. Chodang corn is known for its high sugar content and tender kernels, which result in an exceptionally delicious pot rice.
Step 2
Carefully peel away the outer husks of the corn, one layer at a time.
Step 3
Remove the silk from the corn. Gently pull it away from the kernels, much like detangling hair, to ensure all the silk is removed cleanly.
Step 4
Hold the top and bottom of the corn cob with both hands and snap it in half with a firm twist. This will cleanly detach the cob.
Step 5
Once the vibrant yellow kernels are revealed, give the sweet corn a quick rinse under running water to remove any debris, and set it aside.
Step 6
Wash the 2 cups of short-grain rice lightly and let it soak for just 10 minutes. Soaking for too long can make the rice mushy, so keep it brief.
Step 7
Trim off both ends of the prepared sweet corn. Then, using a sharp knife, carefully cut off the kernels. Don’t discard the cob! The cob will be added to the rice while cooking to infuse it with a deeper corn flavor. Set the kernels aside and prepare the cob for cooking.
Step 8
Finely chop the scallions for garnish. Also, have your 15g piece of butter ready.
Step 9
Now, let’s cook the rice. In your rice cooker pot (or a regular pot), add the soaked rice (2 cups) and 2 cups of water. Add a pinch of salt. Then, add both the corn kernels and the corn cob pieces you prepared earlier. The cob will help distribute the water evenly as the rice cooks.
Step 10
Leave the lid open and bring the water to a boil over medium-high heat (or medium heat) for about 5 minutes. This step helps the rice grains become fluffier and more distinct.
Step 11
After 5 minutes, reduce the heat to low and cover the pot (or rice cooker) completely with the lid. Let it cook undisturbed for 8 minutes.
Step 12
Once 8 minutes have passed, briefly lift the lid and carefully remove only the corn cob pieces from the top of the rice. These cobs add a subtle corn aroma to the rice and prevent the rice from sticking too much.
Step 13
After removing the cobs, place the 15g piece of butter on top of the rice. The butter will melt and add a wonderful richness.
Step 14
Cover the pot again, and turn off the heat completely. Allow the rice to steam for 5 minutes. This resting period allows the butter to melt completely and its flavor to infuse throughout the rice, creating a deliciously fragrant sweet corn pot rice.
Step 15
After the steaming is complete, sprinkle the chopped scallions over the rice for a vibrant touch of color and fresh flavor.
Step 16
Gently fluff the rice with a spatula, ensuring the melted butter and corn kernels are evenly distributed. Finish with a sprinkle of sesame seeds for the final touch! Your beautiful and delicious sweet corn pot rice is now ready to serve.
