These braised chicken drumettes are a huge hit with babies! While the seasoning is mild, the subtle sweet and savory flavor makes them incredibly addictive. They aren’t cooked down to a sticky glaze like adult versions, but are instead braised until wonderfully moist, offering a delightful new taste experience.
Main Ingredients
- 1 pack chicken drumettes (approx. 500g)
- 1 stalk green onion
- 5 cloves garlic
Braising Sauce
- 2 cups water (400ml)
- 2 Tbsp soy sauce
- 2 Tbsp oligosaccharide
- 2 Tbsp cooking wine (like mirin)
- 2 cups water (400ml)

Cooking Instructions
Step 1
First, rinse the chicken drumettes thoroughly under cold water. Trim off any thick or unsightly fat from the drumettes with a knife for a cleaner presentation after cooking.
Step 2
To remove any gamey smell, soak the chicken drumettes in milk for 20 minutes. Milk is excellent at neutralizing odors, ensuring even picky eaters will enjoy them.
Step 3
After soaking in milk, rinse the drumettes again under running water. Place them in a pot, cover with enough water to submerge the chicken, and blanch them briefly just until the bloodiness disappears. Rinse them again under cold water. This step further helps to eliminate any chicken odor.
Step 4
While the drumettes are blanching, prepare the aromatics. Cut the green onion into large, bite-sized pieces similar in length to the drumettes. Peel and wash the whole garlic cloves. Adding whole garlic cloves infuses the braising liquid with a wonderful aroma and a subtle sweetness.
Step 5
Now, it’s time to combine everything in the pot and add the braising sauce. Place the blanched drumettes, chopped green onion, and whole garlic cloves into the pot. Then, pour in 2 cups of water, 2 Tbsp soy sauce, 2 Tbsp oligosaccharide, and 2 Tbsp cooking wine to create the sauce. Since this is for babies, the seasoning is mild. If cooking for adults, you can increase the soy sauce or oligosaccharide slightly.
Step 6
Bring the mixture to a boil over high heat. Once it starts to bubble, reduce the heat to low. Cover the pot and let it simmer gently. Braising for a longer period will make the chicken meat incredibly tender and allow the flavors to penetrate deeply. The longer they simmer, the softer the meat becomes, making them perfect for little ones.
Step 7
When the liquid has reduced to a savory glaze, it’s time for the final step. Increase the heat back to medium-high and stir-fry the drumettes, allowing the sauce to thicken and coat them beautifully until glossy. Be careful not to burn the sauce as it reduces.
