Feeling too lazy to cook rice, but craving something simple yet delicious? This soy sauce bibim guksu is perfect for those moments! Using a few leftover vegetables, fish cakes, and ham from your fridge, you can create a flavorful noodle dish that both kids and adults will love. The abundant toppings and savory sauce are sure to awaken your appetite.
Main Ingredients
- Somen noodles, 2 servings (approx. 200g)
- 1/3 Zucchini (approx. 50g)
- A handful of Oyster mushrooms (approx. 30g)
- 1/3 Onion (approx. 50g)
- 1/2 Fish cake sheet (approx. 30g)
- 2-3 slices of Ham (approx. 30g)
Special Soy Sauce Dressing
- 5 Tbsp Red crab soy sauce or regular soy sauce
- 2 Tbsp Vinegar (for a touch of tanginess)
- 1 Tbsp Sesame oil (for nutty aroma)
- 2 Tbsp Agave syrup or corn syrup (for sweetness)
- 1 Tbsp Cooking oil (for sautéing)
- 0.5 tsp Pink salt or anchovy-based seasoning (adjust to taste)
- 5 Tbsp Red crab soy sauce or regular soy sauce
- 2 Tbsp Vinegar (for a touch of tanginess)
- 1 Tbsp Sesame oil (for nutty aroma)
- 2 Tbsp Agave syrup or corn syrup (for sweetness)
- 1 Tbsp Cooking oil (for sautéing)
- 0.5 tsp Pink salt or anchovy-based seasoning (adjust to taste)
Cooking Instructions
Step 1
Bring a generous pot of water to a rolling boil. Once boiling, add the somen noodles and cook for about 3-4 minutes until they reach a chewy texture. (Refer to the noodle package for exact cooking times, but feel free to adjust based on your preference!).

While the noodles are cooking, thinly slice the zucchini into half-moon shapes. Trim the tough ends off the oyster mushrooms and tear them into bite-sized pieces. Slice the onion into thin strips, and julienne the fish cake and ham to match. This will make the toppings look more appealing.

Don’t feel limited by specific ingredients for the toppings! Feel free to use any leftover vegetables or ingredients you have in your fridge. Bell peppers, carrots, sprouts – get creative and make your own unique bibim guksu!

Once the noodles are perfectly cooked, drain them in a colander and immediately rinse under cold running water multiple times. Rinsing with cold water prevents the noodles from becoming mushy and helps maintain their firm, chewy texture. Drain thoroughly.

Lightly grease a heated frying pan with cooking oil. Add all the prepared julienned topping ingredients and sauté. Lightly season with pink salt (or your preferred seasoning) to enhance the natural flavors of the vegetables. Be careful not to overcook, as you want to retain a slight crispness.

Place the well-drained noodles in a serving bowl. Generously top with the sautéed ingredients. Then, drizzle in the red crab soy sauce, sesame oil, vinegar, and agave syrup.
