Super Simple Crispy Potato Pancakes

I was craving potato pancakes, so I decided to make them! This recipe is perfect for when you want a delicious, crispy-on-the-outside, tender-on-the-inside potato pancake without any fuss. It’s super simple and beginner-friendly.
Main Ingredients
- 2 large, fresh potatoes
- Generous amount of tempura flour for extra crispiness

- 3/4 tablespoon salt (using a rice spoon as a measure)

Cooking Instructions
Step 1
First, peel the potatoes thoroughly and rinse them under cold water several times to remove any dirt or debris. Washing them well ensures a more delicious and hygienic potato pancake.

Now it’s time to grate the potatoes finely. While you can use a grater, I strongly recommend using a blender for a much easier and faster process! A blender will save you a lot of time and effort. Grating by hand is quite strenuous, so definitely opt for the blender.

Transfer the finely grated potato mixture to a bowl. Add the 3/4 tablespoon of salt to season it to your liking. Then, add an appropriate amount of tempura flour to achieve the right batter consistency. The tempura flour is key to achieving that signature crispy texture.

Heat a generous amount of cooking oil in a pan over medium heat. Spoon the batter into the pan, forming small pancakes. It’s best to make them small, as large ones tend to tear easily. Cook until golden brown and crispy on both sides, flipping halfway through.
