Super Simple and Delicious Dubu Kimchi Recipe

Today, we’re making Dubu Kimchi, a dish that’s perfect as a side dish with rice or as a savory accompaniment to drinks. The soft and savory tofu creates a fantastic contrast with the spicy and sweet stir-fried kimchi, loaded with pork belly. With this recipe, you can enjoy a satisfying meal without needing many other side dishes.
Main Ingredients
- 1 block (approx. 300g) Tofu
- 300g Frozen Pork Belly
- 400g Well-fermented Kimchi
- 1/2 stalk (approx. 50g) Green Onion
Seasoning
- 2 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Soy Sauce
- 1 Tbsp Mirin (or cooking wine)
- 1 Tbsp Minced Garlic
- 1 Tbsp Sugar

Cooking Instructions
Step 1
First, thinly slice the 1/2 green onion diagonally, about 0.5cm thick. Chop the 400g of kimchi into bite-sized pieces, around 2-3cm. Using well-fermented kimchi will give a richer flavor.
Step 2
Heat a pan over medium heat and add the 300g of frozen pork belly. Stir-fry until it’s lightly golden brown. Once the pork has rendered enough fat, add 1 Tbsp of sugar and continue to stir-fry. The sugar helps to remove any porky odor and enhances the flavor.
Step 3
When the pork belly is no longer pink and is nicely cooked, add the chopped kimchi (400g) and stir-fry together for about 2 minutes. It’s good to stir-fry until the kimchi is slightly wilted and the flavors start to meld together.
Step 4
Once the kimchi is sautéed, add all the prepared seasoning ingredients. Mix in 2 Tbsp gochugaru, 2 Tbsp soy sauce, 1 Tbsp mirin, and 1 Tbsp minced garlic. Stir-fry together for another 2-3 minutes, ensuring the seasoning coats the kimchi and pork evenly. This step will create a wonderfully spicy and savory kimchi stir-fry.
Step 5
Finally, add the sliced green onion (1/2 stalk) and stir-fry for just about 30 seconds. The fresh aroma of the green onion will come out, further enhancing the overall flavor. Turn off the heat and transfer the delicious kimchi stir-fry to a serving dish. The main dish is ready!
Step 6
Slice the 1 block of tofu into your desired serving pieces. You can blanch it briefly in boiling water, or place it in a microwave-safe container, cover with plastic wrap, poke a few holes, and microwave for 3 minutes and 30 seconds to 4 minutes. This method will result in warm and tender tofu. Serve it alongside the prepared kimchi stir-fry for a bountiful meal!
