Make Big Pie-Style Strawberry Jam Pies with Chocolate Coating
What’s a delicious dessert without a touch of chocolate? We’ve created a strawberry jam pie that captures the taste of Big Pie with the shape of Choco Pie! The process might be a bit involved, but once you taste the final product, you’ll forget all the effort. It’s a delightful treat that combines the best of both worlds.
Ingredients
- 3 large eggs
- 55g cake flour (low-gluten flour)
- 25g granulated sugar
- 2g vanilla extract
- 110g dark chocolate for coating
- A little cooking oil
- Strawberry jam, as needed
Cooking Instructions
Step 1
Separate the egg whites from 3 eggs into a clean bowl. Add 20g of sugar in three additions while whipping to create a stiff, glossy meringue. Aim for peaks that stand firm.
Step 2
In another bowl, combine the 2 egg yolks with the remaining 5g of sugar and 2g of vanilla extract. Mix gently until the sugar is dissolved.
Step 3
Pour the yolk mixture into the meringue. Gently fold it in using a spatula, lifting from the bottom, to avoid deflating the meringue. The batter should be light and airy.
Step 4
Sift the 55g of cake flour into the batter 2-3 times. Gently fold it in until no streaks of flour remain, being careful not to overmix. You want a smooth, lump-free batter.
Step 5
Transfer the batter into a piping bag. If you don’t have a piping bag, you can snip off a corner of a sturdy plastic bag to use.
Step 6
Lightly grease a frying pan with a thin layer of cooking oil. Heat it over very low heat. Using low heat is crucial to prevent the batter from burning.
Step 7
Pipe the batter into circles about 4-5 cm (approx. 1.5-2 inches) in diameter onto the prepared pan. Cover with a lid and cook for about 3 minutes. Carefully flip them over and cook for another 3 minutes until golden brown.
Step 8
Spread a layer of strawberry jam onto one side of each cooked cake round. Use a moderate amount so it doesn’t ooze out too much.
Step 9
Place another cooked cake round on top of the jam-spread one to create a sandwich. This forms the jam-filled center of your pie.
Step 10
Melt the 110g of dark chocolate for coating. You can do this using a double boiler or in short intervals in the microwave, stirring frequently. If desired, you can mix in finely chopped nuts for added texture.
Step 11
Dip each assembled jam sandwich into the melted chocolate, coating it evenly on all sides. Place the chocolate-coated pies on parchment paper and let them dry completely until the chocolate hardens.
