I managed to get my hands on some fresh Minho fish after a long time! The price of Minho can fluctuate yearly, and while it’s often expensive, I was fortunate to find it at a good price this year, so I immediately bought it. It was large and very fresh, perfect for cooking. After cleaning and seasoning the Minho, I pondered over the best way to flavor it. Should I go with a soy sauce base or a salt base? I decided to split the four fish into two batches and prepare them differently. First, I’m sharing the recipe for Minho steamed with a salt-based seasoning. This seasoning offers a wonderfully clean taste, with a subtle saltiness that is incredibly addictive and truly delicious. While a soy sauce base is also very appealing, the simplicity of the salt-based flavor is truly exceptional. - 2 Fresh Minho fish
- Seasoning salt (for marinating)
Seasoning Ingredients
- 300ml Water
- 2/3 Tbsp Salt
- 4 Tbsp Sake (or cooking wine)
- 1/2 tsp Umami enhancer (optional)
- 1 Tbsp Minced garlic
- Shredded chili threads (for garnish)
- Toasted sesame seeds (for garnish)
- Scallion (for garnish, julienned)
- 300ml Water
- 2/3 Tbsp Salt

Cooking Instructions
Step 1
Thoroughly clean the Minho fish by removing the innards and fins. Pat the fish dry with paper towels, then generously sprinkle seasoning salt all over for marination. Let it sit for about 10 minutes.
Step 2
In a small bowl, combine 300ml of water, 2/3 Tbsp of salt, 4 Tbsp of sake (or cooking wine), and 1/2 tsp of umami enhancer (if using). Stir well to create the seasoning sauce. You can adjust the amount of salt according to your preference.
Step 3
Arrange the marinated Minho fish attractively in a pot or deep pan. To help eliminate any fishy odors, sprinkle the minced garlic and chopped scallions evenly over the fish at this stage.
Step 4
Pour the prepared seasoning sauce evenly over the fish. Place the pot over high heat and bring the sauce to a boil. Let it simmer uncovered for about 5 minutes.
Step 5
Once the sauce has reduced by about half, cover the pot with a lid, reduce the heat to low, and let it steam gently for 15-20 minutes until the fish is tender. The cooking time may vary depending on the thickness of the fish, so check it periodically.
Step 6
When the Minho fish is cooked through and tender, remove the lid. Artfully arrange the julienned scallions, shredded chili threads, and toasted sesame seeds as garnish over the fish. Spooning some of the remaining sauce over the garnish will enhance the presentation.
Step 7
Cut the finished Steamed Minho Fish into serving portions and arrange them elegantly on a plate. Serving it warm will allow you to fully appreciate the rich, natural flavor and tender texture of the Minho fish.
