Step 1
First, prepare the vegetables. Thinly slice the onion and cut the green onion diagonally into bite-sized pieces. Prepping the vegetables beforehand makes marinating much easier.

In a large bowl, place the sliced pork shoulder. Add the marinade ingredients: 8 Tbsp soy sauce, 6 Tbsp sugar, 1 Tbsp sesame oil, 1/2 Tbsp minced garlic, and a pinch of black pepper. Mix well with your hands, ensuring the pork is evenly coated with the marinade. For an even richer flavor, let it marinate for about 30 minutes.
Step 3
Add the pre-sliced onion and green onion to the marinated pork. Gently toss everything together, being careful not to mash the vegetables. Mixing the vegetables with the meat now will help them release moisture during cooking, resulting in a juicier dish.

Heat a pan over medium heat and add the marinated pork and vegetables. Cook, stirring occasionally, until the pork is nicely browned and the sauce has thickened. Be careful not to burn the meat.
