I was inspired by a salad recipe presented by culinary researcher Lee Bo-eun on the show ‘Best Cooking Secrets’ a few years ago. While the original recipe included cucumber, I’ve opted to omit it, focusing solely on the wonderful harmony between stone crop and apple. The ingredient proportions might differ slightly from the original, but this combination offers a truly satisfying flavor. Let this vibrant salad bring the essence of spring to you!

Cooking Instructions

Step 1

First, it’s crucial to prepare the stone crop properly. Place it in a sieve and gently rinse it under running water two to three times to remove any dirt or debris. Ensure all soil is washed away. Next, fill a bowl with plenty of cold water and add 1 tablespoon of vinegar. Briefly soak the washed stone crop in this water for about 5 minutes; this helps enhance its fresh and crisp texture. It’s important to drain the water thoroughly so the dressing adheres well, so let it drain completely in the sieve.

Step 2

Now, let’s make the delicious dressing. In a clean bowl, combine 3 tablespoons of olive oil, 2 tablespoons of vinegar, and 1 tablespoon of honey, mixing them well. You can substitute honey with sugar or corn syrup, and adjust the sweetness according to your preference. Add 1 tablespoon of minced garlic for a flavorful kick and a pinch of salt for seasoning. Whisk everything together until the ingredients are smoothly incorporated.
