Main Ingredients- 350g well-fermented Napa cabbage kimchi (cut into bite-sized pieces)

Seasoning- 1.5 Tbsp soy sauce for soup (Guk-ganjang)

Cooking Instructions
Step 1
The key to a great Kimchi Stew is well-fermented kimchi! First, cut the Napa cabbage kimchi into bite-sized pieces (about 2-3 cm) and place them in a pot. Older, more aged kimchi will yield a deeper flavor.

Open the can of Spam and cut it into bite-sized pieces (about 1.5-2 cm thick). You can blanch the Spam in boiling water for a cleaner taste by removing excess fat.

Slice the green onion diagonally into about 3-4 cm lengths. Similarly, slice the Korean green chilies diagonally. If you want extra spiciness, you can include the seeds.

Add the cut Spam and drained tuna to the pot with the kimchi. Now for the seasoning! Add 1.5 Tbsp soy sauce for soup, 1 tsp minced garlic, 1-2 Tbsp red chili powder, and 1 Tbsp sugar. (Tip: If your kimchi is already quite sour, you can omit or reduce the sugar. Adjust based on your taste and the kimchi’s acidity.)

Now, stir-fry everything over medium-high heat for about 3-5 minutes until well combined. This step helps to meld the deep flavor of the kimchi and the savory notes of the Spam.

Pour in water or anchovy-kombu broth until the ingredients are fully submerged. Bring to a boil over high heat and let it simmer vigorously for 10 minutes, allowing the kimchi to soften and the flavors to infuse into the broth.
