Main Ingredients
  • 350g well-fermented Napa cabbage kimchi (cut into bite-sized pieces)
  • 2 small cans of tuna
  • 1 large can of Spam
  • 1 stalk of green onion (sliced diagonally)
  • 2 Korean green chilies (sliced diagonally)

Seasoning
  • 1.5 Tbsp soy sauce for soup (Guk-ganjang)
  • 1 tsp minced garlic
  • 1-2 Tbsp red chili powder (adjust to your spice preference)
  • 1 Tbsp sugar (adjust based on kimchi’s sourness)

Cooking Instructions

Step 1

The key to a great Kimchi Stew is well-fermented kimchi! First, cut the Napa cabbage kimchi into bite-sized pieces (about 2-3 cm) and place them in a pot. Older, more aged kimchi will yield a deeper flavor.

Step 2

Open the can of Spam and cut it into bite-sized pieces (about 1.5-2 cm thick). You can blanch the Spam in boiling water for a cleaner taste by removing excess fat.

Step 3

Slice the green onion diagonally into about 3-4 cm lengths. Similarly, slice the Korean green chilies diagonally. If you want extra spiciness, you can include the seeds.

Step 4

Add the cut Spam and drained tuna to the pot with the kimchi. Now for the seasoning! Add 1.5 Tbsp soy sauce for soup, 1 tsp minced garlic, 1-2 Tbsp red chili powder, and 1 Tbsp sugar. (Tip: If your kimchi is already quite sour, you can omit or reduce the sugar. Adjust based on your taste and the kimchi’s acidity.)

Step 5

Now, stir-fry everything over medium-high heat for about 3-5 minutes until well combined. This step helps to meld the deep flavor of the kimchi and the savory notes of the Spam.

Step 6

Pour in water or anchovy-kombu broth until the ingredients are fully submerged. Bring to a boil over high heat and let it simmer vigorously for 10 minutes, allowing the kimchi to soften and the flavors to infuse into the broth.

Step 7

Once the kimchi is tender, add the sliced green onions and green chilies and simmer for another 3-5 minutes. Taste the stew and adjust the seasoning. If it’s too bland, add more soy sauce or salt. If it’s too salty, add a little more water or broth.

Step 8

A Kimchi Stew with both tuna and Spam is a match made in heaven! It’s a dish so appealing that even picky eaters will love it. Enjoy this delicious Kimchi Stew with a warm bowl of rice tonight!
