Spicy Tteokbokki with Plenty of Vegetables

Tteokbokki Ingredients
- Rice cake for soup (tteokguk tteok), about 200-300g (or desired amount)
- Carrot, 1/4, very finely minced or julienned
- Cabbage, 1/4, very finely minced or julienned
- Shiitake mushroom, 1/2, cleaned and thinly sliced
- Onion, 1/4, thinly sliced
- Green onion, 1/2 stalk, diagonally sliced
- Mozzarella cheese, generous amount (optional)
- Honey (Sarang꿀), 2 Tbsp (sweetness adjustable)
Spicy Sauce
- Salt, a pinch (for sautéing vegetables)
- Gochujang (Korean chili paste), 2 Tbsp
- Gochugaru (Korean chili powder), 2 Tbsp (adjust for spice level)
- Minced garlic, 1 Tbsp

Cooking Instructions
Step 1
First, rinse the rice cakes for soup under cold water. If they are hard, soak them in cold water for about 10-20 minutes. To ensure children eat their vegetables and to add more nutrients, finely mince the carrot and cabbage or julienne them very thinly. Thinly slice the shiitake mushroom, discarding the tough stem, and slice the onion thinly as well. Cut the green onion diagonally.
Step 2
Heat a pan with a little olive oil over medium heat. Add the minced carrot and cabbage, sprinkle a pinch of salt, and sauté until the vegetables are slightly softened and their natural sweetness is released. Once the vegetables are lightly cooked, pour in about 1.5 cups of water. Add 1 Tbsp of gochujang and stir well to dissolve any clumps. Then, add the sliced shiitake mushrooms, onions, and the soaked rice cakes. Bring to a simmer and cook together. Add a tiny pinch of salt if needed to balance the flavor.
Step 3
As the rice cakes become tender and the sauce thickens slightly, add the diagonally sliced green onions along with the remaining sauce ingredients: 2 Tbsp gochugaru and 1 Tbsp minced garlic. Mix everything thoroughly. Stir in 2 Tbsp of honey for sweetness; taste and adjust the sweetness by adding more honey if desired. The honey helps to mellow the spiciness and adds a delicious depth of flavor.
