Main Ingredients
- Noodles (somen or medium noodles) for 2 servings
- 1/3 Onion
- 6 Tbsp Kimchi
- 4 Perilla leaves (깻잎)
Spicy & Sweet Bibim Sauce
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Soy Sauce
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Sugar
- 2 Tbsp Maesil Cheong (Plum Extract)
- 2 Tbsp Vinegar
- 1 Tbsp Oligodang (Oligosaccharide or corn syrup)
- 1 Tbsp Sesame Oil
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Soy Sauce
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Sugar
- 2 Tbsp Maesil Cheong (Plum Extract)
- 2 Tbsp Vinegar
- 1 Tbsp Oligodang (Oligosaccharide or corn syrup)
- 1 Tbsp Sesame Oil
Cooking Instructions
Step 1
First, finely shred the kimchi into bite-sized pieces (about 1cm wide). You can lightly rinse the kimchi under running water beforehand if you prefer a milder flavor. Thinly slice the onion as well.
Step 2
Now, let’s make the special sauce that will define the flavor of your bibim guksu. In a bowl, combine 1 Tbsp gochujang, 1 Tbsp soy sauce, 1 Tbsp gochugaru, 1 Tbsp sugar, 2 Tbsp maesil cheong for sweetness and depth, 2 Tbsp vinegar for that essential tanginess, 1 Tbsp oligodang for gloss and a smooth texture, and finally, 1 Tbsp sesame oil for nutty aroma.
Step 3
Mix all the sauce ingredients thoroughly with a spoon until smooth. Bring a generous amount of water to a boil in a pot. Once boiling, add the noodles and cook them for about 30 seconds to 1 minute less than the package instructions (usually around 3 minutes). Cooking them slightly under allows them to retain a chewy texture without becoming mushy when mixed.
Step 4
Drain the cooked noodles in a colander, then immediately plunge them into cold water. Rinse them quickly under cold running water to remove excess starch and achieve a springy, firm texture. It’s important to drain them thoroughly after rinsing.
Step 5
Place the prepared chewy noodles in a bowl. Top with the shredded kimchi, sliced onion, and perilla leaves. Generously spoon the delicious bibim sauce over everything. Now, gently mix everything together with your hands until well combined and the noodles are evenly coated. For an even more satisfying dish, consider adding a hard-boiled egg, shredded cucumber, or toasted sesame seeds.
