Main Ingredients
  • 5 squid (fresh)
  • 1 onion
  • 1/2 zucchini
  • 2 red chilies
  • 1 green onion
  • 3 ‘Seafood Umami Coin’ (broth cubes)

Seasoning Ingredients
  • 2-3 Tbsp sunflower oil
  • 1.5 Tbsp minced garlic
  • 3-4 Tbsp gochugaru (Korean chili flakes)
  • 1 tsp salt
  • 1.5-2 Tbsp sugar (adjust to taste)
  • Pinch of black pepper
  • 3 Tbsp cooking wine (mirin or similar)
  • 1 tsp sesame oil
  • Pinch of sesame seeds

Cooking Instructions

Step 1

Prepare the fresh squid by removing the innards and cleaning it thoroughly. Cut it into bite-sized pieces. Making shallow cuts on the squid will help it absorb the sauce better and improve its texture.

Step 2

Slice the onion into thick strips. Cut the zucchini into half-moon shapes about 0.5cm thick. Slice the green onion and red chilies diagonally into large pieces. Feel free to add other vegetables like mushrooms or carrots for extra flavor and texture.

Step 3

Heat 2-3 tablespoons of sunflower oil in a large wok or frying pan over medium heat. Add 1.5 tablespoons of minced garlic and stir-fry for about 30 seconds until fragrant, creating a garlic-infused oil. Add the prepared squid and pour in 3 tablespoons of cooking wine (like mirin) to eliminate any fishy odors while stir-frying.

Step 4

When the squid is about halfway cooked and has changed color, add all the prepared vegetables (onion, zucchini, green onion, red chilies) to the pan. Sprinkle in 3-4 tablespoons of gochugaru and mix well, allowing the vegetables to soften slightly.

Step 5

Now it’s time for the main seasoning. Add 1 teaspoon of salt, 1.5-2 tablespoons of sugar, and a pinch of black pepper. You can adjust the amount of sugar to your preference for sweetness. Stir-fry over high heat, mixing everything thoroughly to ensure even cooking.

Step 6

In this recipe, instead of artificial seasonings, we used 3 ‘Seafood Umami Coins’. These add a wonderful, deep seafood umami and rich flavor, elevating the taste of the squid stir-fry.

Step 7

Finally, quickly stir-fry just until the vegetables are tender but still have a slight crispness, so they don’t become mushy. Just before turning off the heat, drizzle in 1 teaspoon of sesame oil and sprinkle with a pinch of sesame seeds to finish. Your delicious squid stir-fry is ready! Serve it over warm rice or enjoy it with fresh lettuce wraps.
