  • Cooking Time : Within 15 minutes
  • Difficulty : Anyone

Ingredients

  • 1 cup Tteokguk tteok (rice cake slices for soup)
  • 1 cup well-fermented kimchi (chopped into bite-sized pieces)
  • 1 Tbsp plum extract or sugar
  • 1 tsp black pepper
  • 1 tsp minced garlic
  • 1 ladle kimchi brine (approx. 1/2 cup)
  • 1 tsp soy sauce or fish sauce
  • 2 Tbsp perilla oil (deulgireum)
  • 1 tsp toasted sesame seeds
  • A pinch of chopped green onions (for garnish)

Cooking Instructions

Step 1

Heat 2 tablespoons of perilla oil in a wide pan over medium heat. Add the pre-chopped kimchi and stir-fry until it becomes translucent and softened, about 2-3 minutes. This step helps to bring out the kimchi’s flavor.

Step 1

Step 2

To the stir-fried kimchi, add 1 teaspoon of minced garlic and 1 tablespoon of plum extract (or sugar). Continue to stir-fry together. The plum extract adds umami, while sugar balances the kimchi’s sourness for a well-rounded taste.

Step 2

Step 3

Now, add 1 cup of tteokguk tteok to the pan. Stir-fry them together, ensuring the kimchi seasoning coats the rice cakes evenly. Gently mix with a spatula to prevent the rice cakes from sticking together.

Step 3

Step 4

For a spicy kick, add 1 teaspoon of black pepper and 1 ladle of kimchi brine. The kimchi brine adds a deep savory flavor and pleasant heat to the tteokbokki. Season with 1 teaspoon of soy sauce (or fish sauce). Tip: Soaking the rice cakes in cold water for about 10 minutes beforehand will help them absorb the seasoning better and become more tender.

Step 4

Step 5

Continue to stir-fry for another 2-3 minutes, allowing all the ingredients to meld together beautifully. Finally, sprinkle with 1 teaspoon of toasted sesame seeds for a nutty aroma and garnish with chopped green onions for a visually appealing finish. This simple yet flavorful Kimchi Tteokbokki will surely add a special touch to your meal!
