Ingredients
- 1 cup Tteokguk tteok (rice cake slices for soup)
- 1 cup well-fermented kimchi (chopped into bite-sized pieces)
- 1 Tbsp plum extract or sugar
- 1 tsp black pepper
- 1 tsp minced garlic
- 1 ladle kimchi brine (approx. 1/2 cup)
- 1 tsp soy sauce or fish sauce
- 2 Tbsp perilla oil (deulgireum)
- 1 tsp toasted sesame seeds
- A pinch of chopped green onions (for garnish)
Cooking Instructions
Step 1
Heat 2 tablespoons of perilla oil in a wide pan over medium heat. Add the pre-chopped kimchi and stir-fry until it becomes translucent and softened, about 2-3 minutes. This step helps to bring out the kimchi’s flavor.
Step 2
To the stir-fried kimchi, add 1 teaspoon of minced garlic and 1 tablespoon of plum extract (or sugar). Continue to stir-fry together. The plum extract adds umami, while sugar balances the kimchi’s sourness for a well-rounded taste.
