Spicy & Sweet Gochujang Potato Stir-fry
A Delicious Side Dish! Spicy and Sweet Gochujang Potato Stir-fry Recipe
Potatoes are incredibly affordable this year, allowing us to enjoy a variety of potato dishes! Today, I’ve made a stir-fry with a delightful spicy and sweet gochujang sauce. This dish alone is enough to make a hearty meal. You can also watch the video tutorial here: https://youtu.be/8YtXNp2bmcA
Main Ingredients
- 3 medium potatoes
- 1/3 carrot
- 1/2 onion
- 2 red chili peppers
- 35g minced garlic (or 5-6 cloves sliced thinly)
- 1/2 bell pepper (using various colors makes it more visually appealing)
Seasoning
- 3 Tbsp soy sauce
- 1.5 Tbsp gochujang (Korean chili paste)
- 2 Tbsp corn syrup or honey
- 1/2 Tbsp sugar
- 1/2 cup water or anchovy-dashima broth (approx. 100ml)
- Pinch of black pepper
- Pinch of sesame seeds
- 3 Tbsp soy sauce
- 1.5 Tbsp gochujang (Korean chili paste)
- 2 Tbsp corn syrup or honey
- 1/2 Tbsp sugar
- 1/2 cup water or anchovy-dashima broth (approx. 100ml)
- Pinch of black pepper
- Pinch of sesame seeds
Cooking Instructions
Step 1
Wash all vegetables thoroughly. Dice the potatoes, carrot, and onion into approximately 1.5cm cubes. Slice the red chili peppers and bell pepper to a similar size. If using whole garlic cloves, slice them thinly.
Step 2
The bell pepper is optional and adds color. If you prefer a spicier dish, you can substitute the red chili peppers with Cheongyang chili peppers. Adjust the amount to your preference.
Step 3
In a large bowl, combine 3 Tbsp soy sauce, 1.5 Tbsp gochujang, 2 Tbsp corn syrup, 1/2 Tbsp sugar, and a pinch of black pepper. Mix well to create the sauce. Finally, add 1/2 cup of water or broth and stir until the seasoning is well dissolved.
Step 4
Heat a generous amount of cooking oil in a pan over medium-low heat. Add the sliced garlic and sauté until fragrant, being careful not to burn it. Once the garlic is aromatic, add the cubed potatoes and stir-fry over medium-low heat until they begin to turn translucent. Then, add the carrot and onion and continue to stir-fry. Once the vegetables are somewhat cooked, pour in all the prepared sauce and mix evenly. Cover the pan and let it simmer gently for about 5 minutes.
Step 5
After 5 minutes, remove the lid and check if the potatoes are tender by piercing them with a fork. Once the potatoes are cooked, add the sliced red chili peppers and bell pepper. Continue to simmer over medium-low heat until the sauce thickens slightly. It’s important to stir gently to prevent the potatoes from breaking apart. If there’s too much liquid, simmer a little longer.
Step 6
Finally, sprinkle with sesame seeds for added sweetness and nutty flavor. Your delicious Spicy and Sweet Gochujang Potato Stir-fry is ready!
