Spicy & Sweet Gochujang Pork Stir-fry (Jeyuk Bokkeum)

Tender pork shoulder coated in a vibrant, spicy, and sweet gochujang sauce. This easy Jeyuk Bokkeum recipe is perfect for a weeknight meal and makes a fantastic side dish or wrap filling.

Main Ingredients

  • 1 lb (approx. 600g) Pork Shoulder, thinly sliced
  • 1/2 Onion, thinly sliced
  • 1 handful Green Onion, cut into large pieces
  • A small handful of Oyster Mushrooms
  • A small piece of Carrot, thinly sliced

Sauce Ingredients

  • 1 Tbsp Gochujang (Korean chili paste)
  • 3 Tbsp Soy Sauce
  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Oyster Sauce
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Mirin (or Cooking Wine)
  • Pinch of Black Pepper
  • 1 tsp Sesame Seeds (for garnish)

Cooking Instructions

Step 1

Start with pork shoulder, ideally sliced for bulgogi, purchased from the market. Choose cuts with a good balance of meat and fat for tenderness. Cut the pork into bite-sized pieces, about 1.5-2 cm thick.

In a bowl (or directly in the pan you’ll be cooking in to save on dishes!), combine the sliced pork with 1 Tbsp of mirin and a pinch of black pepper. Gently mix and massage the seasonings into the meat. The mirin helps tenderize the pork and remove any unwanted odors.

Now, let’s add the primary sauce ingredients directly to the pork. Add 1 Tbsp of sugar, 2 Tbsp of gochugaru (adjust to your spice preference), and 3 Tbsp of soy sauce.

Next, add 1 heaping Tbsp of gochujang, 1 Tbsp of minced garlic, and 1 Tbsp of oyster sauce for extra umami depth.

Mix everything thoroughly until the pork is evenly coated with the marinade. For the best flavor, cover the bowl (or pan) with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld. If you’re short on time, 30 minutes will also work.

Just before you’re ready to cook, prepare your vegetables. Cut about a handful of green onions into large sections. Prepare a handful of oyster mushrooms by trimming the tough ends and gently tearing them apart; this increases their surface area for absorbing sauce.

Thinly slice half an onion and a small piece of carrot. The carrot adds a lovely color and a subtle crunch. Feel free to add any other vegetables you have on hand, like cabbage or bell peppers.

Heat a tablespoon of cooking oil in a large skillet or wok over medium-high heat. Add the marinated pork and stir-fry quickly, breaking it apart with chopsticks or a spatula as it cooks to prevent clumping. Once the pork is mostly cooked through, add all the prepared vegetables and continue to stir-fry until they are tender-crisp.
