Spicy & Sweet Gochujang Pork Bulgogi (Crispy Style)
Crispy Gochujang Pork Bulgogi using Pork Shoulder, Pan-Fried to Perfection
This recipe features Gochujang (Korean chili paste) crispy pork bulgogi made with pork shoulder. It’s a dish that promises a delightful texture and a savory-spicy kick, perfect for any meal.
Main Ingredients
- 250g Pork Shoulder, cut into bite-sized pieces
- 1/2 Green Onion (Scallion), thinly sliced
Cooking Instructions
Step 1
Prepare the pork shoulder by cutting it into bite-sized pieces, approximately 3-4 cm. Lightly rinse the meat and pat it dry with paper towels. This size is ideal to prevent it from falling apart too much during cooking.
Step 2
Thinly slice the green onion, including both the white and green parts. Slicing it diagonally or into thin rounds (about 0.5 cm thick) will distribute its aroma evenly throughout the dish.
Step 3
In a mixing bowl, combine the cut pork and the sliced green onions. This step ensures that the seasoning will coat all the ingredients uniformly.
Step 4
Now, let’s add the flavor base. Add 1 Tbsp Gochujang, 0.5 Tbsp Gochugaru, 1 Tsp Soy Sauce, 1.5 Tbsp Soy Sauce, 1 Tbsp Sugar, 1 Tbsp Mirin, 1 Tbsp Minced Garlic, and 0.5 Tsp Sesame Oil to the bowl. Gently mix everything together with your hands, ensuring that the marinade thoroughly coats the pork and green onions. Well-marinated meat will yield a much more flavorful result.
Step 5
Heat a lightly oiled pan over medium-low heat. Add the marinated pork and green onions, spreading them out in a single layer as much as possible. Maintaining a medium-low heat is crucial throughout the cooking process to prevent burning and ensure the pork cooks through evenly.
Step 6
Cook the pork, stirring occasionally, until it is nicely browned and slightly crispy. Continue cooking over medium-low heat until all the moisture has evaporated and the pork has a satisfyingly crisp texture. You’ll know it’s done when a chopstick inserted into the thickest piece comes out clean with no pink juices. This crispy texture is key to enjoying the full flavor of the Gochujang marinade.
