Sweet anchovy stir-fries are nice, but we ‘adults’ love them made spicy with gochujang, right? This gochujang anchovy stir-fry tastes just like grandma used to make. It minimizes dishwashing and the method is easy. Great, great! A side dish that parents love! Let’s go with this recipe!
Main Ingredients
- 50g large dried anchovies (for soup)
- 7cm piece of green onion
- 3 Korean chili peppers (Cheongyang peppers)
Seasoning Ingredients
- 1 Tbsp cooking wine (like Mirin)
- 1 Tbsp perilla oil
- 2 Tbsp oligosaccharide
- 1 Tbsp minced garlic
- 3 Tbsp gochujang (Korean chili paste, leveled)
- A pinch of sesame seeds

Cooking Instructions
Step 1
Split the anchovies open along their backs and remove the heads. This will also remove the guts, resulting in a cleaner taste.
Step 2
Add 1 tablespoon of cooking wine to the anchovies to remove any fishy smell.
Step 3
Add 2 tablespoons of oligosaccharide for a touch of sweetness.
Step 4
Mix in 1 tablespoon of minced garlic for added flavor.
Step 5
Add 3 tablespoons of gochujang, leveled off, for the core spicy flavor.
Step 6
Finely chop the green onion and the Korean chili peppers. If you like it spicier, you can leave the seeds in the chili peppers.
Step 7
Combine all the seasoning ingredients with the chopped green onion and chili peppers. Gently mix them with the anchovies to ensure the seasoning coats them evenly. (Do not turn on the heat yet!)
Step 8
Add the prepared anchovies and mix again gently, ensuring the seasoning adheres well to each anchovy.
Step 9
Now, turn on the heat to low. It’s crucial to keep the heat low to prevent the anchovies from burning.
Step 10
Once the heat is on, cover the pan with a lid and cook for exactly 50 seconds (maintain low heat).
Step 11
Remove the lid and stir-fry until the seasoning is absorbed by the anchovies and slightly reduced, being careful not to burn them. Avoid overcooking so the anchovies remain tender.
Step 12
Turn off the heat and sprinkle with sesame seeds for a nutty finish.
Step 13
Serve over a bowl of hot, freshly cooked rice. You’ll find yourself easily finishing a whole bowl!
