Main Ingredients

Seasoning Ingredients
  • 3 Tbsp Mirin (Rice Wine)
  • 1 Tbsp Sugar
  • 1-2 Tbsp Cooking Oil
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Minced Garlic
  • 2 Tbsp Gochujang (Red Pepper Paste)
  • 1 Tbsp Gochugaru (Red Pepper Flakes)
  • 1 Tbsp Corn Syrup (or Oligosaccharide)
  • A drizzle of Sesame Oil
  • A sprinkle of Toasted Sesame Seeds

Cooking Instructions

Step 1

Cut the 250g of dried shredded squid (Jinmichae) into bite-sized pieces, about 5cm long. Place them in a bowl, add 1 Tbsp of sugar and 3 Tbsp of mirin, and gently mix by hand. This step helps to soften the squid and allow it to absorb the sauce better.

Step 2

Microwave the seasoned Jinmichae for 1 minute. This process helps to slightly dry out the squid, enhancing its chewy texture. (Adjust the time based on your microwave’s power.)

Step 3

Once removed from the microwave and slightly cooled, cut the Jinmichae again into more manageable, bite-sized pieces. If they are still too long, cut them shorter, especially if children will be eating them.

Step 4

Now, let’s prepare the delicious sauce that is key to this stir-fry. Heat 1-2 Tbsp of cooking oil in a frying pan over medium heat. Add 2 Tbsp of soy sauce, 2 Tbsp of gochujang, 1 Tbsp of gochugaru, 1 Tbsp of minced garlic, and 1 Tbsp of sugar. Mix them together.

Step 5

Once the sauce mixture begins to bubble, add 3 Tbsp of water and stir well to combine. Adding water helps prevent the sauce from becoming too salty or burning, and creates a smoother consistency.

Step 6

Reduce the heat to low and simmer for 1-2 minutes, stirring continuously, until the sauce thickens slightly. Be careful not to let the sauce burn or dry out completely. After turning off the heat, stir in 1 Tbsp of corn syrup (or oligosaccharide) until well combined. The corn syrup adds a glossy finish and a touch more sweetness.

Step 7

Add the prepared Jinmichae to the frying pan with the sauce. Stir-fry gently over the residual heat of the pan for about 1-2 minutes. Avoid overcooking, as this can make the squid tough. The goal is to coat the Jinmichae evenly with the sauce.

Step 8

Finally, drizzle a little sesame oil for aroma and sprinkle generously with toasted sesame seeds for a nutty flavor. Your delicious stir-fried Jinmichae is now complete! Serve it over warm rice or enjoy it as is.
