  • 50ml Soju (for removing gamey smell)
  • 2 cloves Whole Garlic
  • 10g Ginger (about thumb-sized piece)
  • 1 Bay Leaf

First, rinse the prepared chicken feet thoroughly under cold running water to remove any blood. Properly draining the blood is crucial for a clean taste without any unpleasant odors.

Let’s use aromatics to remove any gamey smell from the chicken feet. In a pot, add enough water to cover the chicken feet, then add 50ml of soju, 2 whole garlic cloves, 10g of ginger, and 1 bay leaf. For the ginger, slicing it thinly or lightly crushing it will release more flavor.

Whisk everything together until well combined. Using corn syrup instead of sugar will give the dish a lovely sheen.
