Main Ingredients
- 500g Prepared Chicken Feet
- 50ml Soju (for removing gamey smell)
- 2 cloves Whole Garlic
- 10g Ginger (about thumb-sized piece)
- 1 Bay Leaf
Cooking Instructions
Step 1
First, rinse the prepared chicken feet thoroughly under cold running water to remove any blood. Properly draining the blood is crucial for a clean taste without any unpleasant odors.
Step 2
Let’s use aromatics to remove any gamey smell from the chicken feet. In a pot, add enough water to cover the chicken feet, then add 50ml of soju, 2 whole garlic cloves, 10g of ginger, and 1 bay leaf. For the ginger, slicing it thinly or lightly crushing it will release more flavor.
Step 3
Once the water comes to a rolling boil, add the prepared chicken feet and boil over high heat for about 5 minutes. Be careful not to overcook them, as they can become too soft and lose their chewy texture.
Step 4
Drain the boiled chicken feet and rinse them again under cold water. This step helps remove any surface impurities and ensures a more firm and chewy texture.
Step 5
Now, let’s prepare the vegetables. Slice the onion into thick strips. This way, they will retain some bite even after stir-frying.
Step 6
Slice the green onion diagonally into about 2-3cm pieces. Diagonal cuts not only help the sauce adhere better but also make for a visually appealing dish.
Step 7
Wash the perilla leaves thoroughly and remove the stems. Then, cut them into roughly 2-3 pieces each. The fragrant aroma of perilla leaves will enhance the overall flavor of the chicken feet dish.
Step 8
Time to make the delicious sauce! In a bowl, combine 3 Tbsp gochugaru, 1 Tbsp gochujang, 3 Tbsp soy sauce, 1 Tbsp mirin, 0.5 Tbsp sugar, 1 pinch black pepper, 0.5 Tbsp oyster sauce, 1 Tbsp minced garlic, and finally 1 pinch of salt. Whisk everything together until well combined. Using corn syrup instead of sugar will give the dish a lovely sheen.
Step 9
Heat 2 Tbsp of chili oil in a pan over high heat. Add the drained chicken feet and stir-fry them quickly until they are lightly browned and coated with oil. This step is important for developing flavor and texture.
Step 10
Once the chicken feet are nicely coated with oil, add all the prepared sauce and stir-fry them together, mixing well. Reduce the heat to medium and continue to cook until the sauce thickens and clings to the chicken feet.
Step 11
When the sauce has thickened and is bubbling, add the sliced onion, green onion, and perilla leaves to the pan. Stir-fry quickly over high heat just until the vegetables are slightly softened but still have a slight bite. Avoid overcooking the vegetables. Your delicious stir-fried chicken feet are ready to enjoy!
