With pre-made, ample amounts of squid ssamjang, you can whip up a satisfying meal in no time! When you don’t want to cook in the heat of summer, prepare a generous batch of squid ssamjang and enjoy it with various fresh vegetables for wraps. It’s so delicious, it will revive your appetite! Mix it with rice, and it becomes a true rice thief!
Main Ingredients- 1 Korean squid, cleaned (approx. 180g)
- 5 Cheongyang peppers
- 8 cloves whole garlic
- 1/2 stalk green onion
- 1/2 Tbsp butter
Squid Ssamjang Seasoning- 4 Tbsp Doenjang (soybean paste)
- 2 Tbsp Gochujang (red chili paste)
- 3 Tbsp Oligodang (corn syrup/oligosaccharide)
- 1 Tbsp Gochugaru (red chili flakes)
- Pinch of toasted sesame seeds
- 2 Tbsp Mirin (rice wine)
- 3 Tbsp Water
- 4 Tbsp Doenjang (soybean paste)
- 2 Tbsp Gochujang (red chili paste)
- 3 Tbsp Oligodang (corn syrup/oligosaccharide)
- 1 Tbsp Gochugaru (red chili flakes)
- Pinch of toasted sesame seeds
- 2 Tbsp Mirin (rice wine)
- 3 Tbsp Water
Cooking Instructions
Step 1
First, place the cleaned Korean squid (approx. 180g), 5 Cheongyang peppers, and 8 whole garlic cloves into a food processor. Pulse until finely minced. You can adjust the texture of the peppers and garlic to your preference.
Step 2
Transfer all the minced squid, peppers, and garlic into a heated pan.
Step 3
Now, add all the ingredients for the squid ssamjang seasoning: 4 Tbsp doenjang, 2 Tbsp gochujang, 3 Tbsp oligodang, 1 Tbsp gochugaru, 2 Tbsp mirin, and 3 Tbsp water. Finally, sprinkle in some toasted sesame seeds for added nuttiness.
Step 4
Once all ingredients are in the pan, reduce the heat to low. Stir gently with a spatula and cook until the squid is fully cooked and the seasoning has reduced to a thick paste, resembling a braised dish. Be careful not to let it burn. This completes your delicious squid ssamjang!

Now, let’s make the fried rice. In a separate pan, add the chopped green onion and 1/2 Tbsp of butter. Over low heat, gently sauté the green onion until it becomes translucent and fragrant, infusing the butter with its aroma.

Chop the cleaned squid (approx. 140g) into bite-sized pieces. Add the chopped squid to the pan with the sautéed green onion and butter. Stir-fry until the squid is cooked through. It’s best to cook over medium-low heat to prevent the squid from becoming tough.
Step 7
Add one serving of cooked rice to the pan with the squid and green onions. Use a spatula to break up any clumps of rice and stir-fry, ensuring the rice is well combined with the squid and green onion mixture.
Step 8
Spoon the prepared squid ssamjang onto the rice. Adjust the amount of ssamjang according to your taste preference. It’s best to start with a smaller amount and add more if needed, as it can be quite salty.
Step 9
After adding the ssamjang, quickly stir-fry everything together until the rice and ssamjang are thoroughly mixed. Once all ingredients are well combined, your delicious Spicy Squid Ssamjang Fried Rice is ready! Serve in a bowl and enjoy!
