Ingredients
  • Prepared sea pineapple 650g
  • Korean chili peppers (Cheongyang) 3
  • Scallions or green onions, a moderate amount (to taste)

Seasoning
  • Coarse salt 4 pinches (adjust to taste)
  • Anchovy sauce (Kkanari Aekjeot) 3 Tbsp
  • Minced garlic 1 Tbsp
  • Red pepper flakes (Gochugaru) 2 Tbsp
  • Sugar, a little (adjust sweetness)
  • Toasted sesame seeds, sprinkled

Cooking Instructions

Step 1

Assuming the sea pineapples are already cleaned and prepped, cut them into bite-sized pieces and place them in a large mixing bowl. Add 4 pinches of coarse salt and 3 Tbsp of anchovy sauce. Gently mix them together to marinate. You can adjust the amount of salt and anchovy sauce based on the natural saltiness of the sea pineapple and your personal preference.

Step 2

Add 2 Tbsp of red pepper flakes to the marinated sea pineapple and mix again thoroughly. Gently toss with your hands to ensure the seasoning coats the sea pineapple evenly.

Step 3

Let the seasoned sea pineapple sit for about 5 minutes. This allows the red pepper flakes to soften and meld with the natural juices of the sea pineapple, creating a smoother, more integrated sauce.

Step 4

Finely chop the scallions or green onions. For the Korean chili peppers, remove the stems, slice them in half lengthwise, and remove the seeds before finely chopping. If you enjoy a spicier kick, you can leave some of the seeds in. Add 1 Tbsp of minced garlic and a little sugar to the prepared vegetables. Mix everything together well until uniformly coated. This completes your delicious Sea Pineapple Salad! Finish by sprinkling toasted sesame seeds on top.
