Main Ingredients
- 4 fresh eggs
- 2 bowls of cooked rice
- 2 Tbsp roasted cashews
- 1/2 ripe tomato
- 1 sausage
- 2 green chilies
Seasoning
- 3 Tbsp soy sauce
- 1 Tbsp chili powder
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp sesame seeds
- A drizzle of steak sauce (optional)
- 3 Tbsp soy sauce
- 1 Tbsp chili powder
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp sesame seeds
- A drizzle of steak sauce (optional)
Cooking Instructions
Step 1
Begin by cracking the 4 eggs into a bowl. Remove the chalazae (the white, stringy bits) for a smoother texture. You can optionally add a pinch of salt at this stage.
Step 2
Heat some cooking oil in a pan over medium-high heat. Pour in the beaten eggs and cook, adjusting the heat between medium-high and medium. Use a spatula to gently scrape the edges of the egg as it cooks, allowing the uncooked egg to flow underneath, creating a layered effect.
Step 3
Once the bottom of the egg is golden brown and cooked through, carefully flip the entire omelet using your spatula. Cook the other side until it’s also nicely browned. This method ensures a crispy exterior and a tender, moist interior.
Step 4
Remove the cooked egg from the pan and set it aside. Add a little more cooking oil to the same pan if needed. Add the 2 bowls of cooked rice. Pour in 2 tablespoons of soy sauce and the roasted cashews. Stir-fry over high heat until the rice is well-coated and slightly toasted.
Step 5
Dice the 1/2 tomato into small cubes and add it to the pan with the rice. Drizzle 1 tablespoon of soy sauce directly over the tomatoes and continue to stir-fry. The tomatoes will soften and release their juices, adding a fresh tang to the rice.
Step 6
Slice the sausage diagonally into bite-sized pieces and finely chop the green chilies. Add both to the pan and mix well with the rice. Stir-fry until the sausage is heated through and the chilies are fragrant.
Step 7
Now, add 1 tablespoon of chili powder and 1 tablespoon of gochujang to the pan. Stir everything together thoroughly, ensuring the seasonings are evenly distributed. For a sweeter taste, you can adjust the amount of these ingredients or add a touch of sugar or plum syrup. (Note: The original recipe mentioned steak sauce at the end. If you prefer a sweeter profile, you might add a little ketchup here instead of, or in addition to, the steak sauce. The provided steps have been adjusted to reflect a more typical fried rice flavor profile.)
Step 8
Once the fried rice is well combined and heated through, transfer it to a serving plate. Crumble the cooked egg over the rice, or serve it on the side. Sprinkle generously with sesame seeds for a nutty aroma. (Optional: A drizzle of steak sauce can be added for an extra layer of savory flavor.)
