Main Ingredients
  • 250g Bean sprouts
  • 1/2 Onion (approx. 50g)
  • 3 cloves Garlic
  • 2 Red chilies
  • Approx. 10 Vienna sausages (approx. 90g)
  • 2 Tbsp Chili oil

Sauce (measured with a tablespoon)
  • 0.7 Tbsp Sugar
  • 0.2 Tbsp Black pepper
  • 1 Tbsp Mirin (or rice wine)
  • 1 Tbsp Soy sauce
  • 1 Tbsp Oyster sauce
  • 1 Tbsp Gochugaru (Korean red chili powder, spicy variety)

Cooking Instructions

Step 1

To ensure the bean sprouts remain crisp and crunchy, mix all the sauce ingredients together in a small bowl beforehand. This allows the flavors to meld and makes seasoning quick and easy during cooking.

Step 2

Mince the garlic cloves. Aim for a coarse mince rather than a fine paste, as this will provide a more robust garlic flavor when sautéed.

Step 3

Slice the onion thinly into half-moon shapes. Cutting it into fine strips ensures it cooks evenly with the other ingredients.

Step 4

Slice the red chilies into bite-sized pieces. Remove the seeds if you prefer a milder heat, or leave them in for extra spice. These add a nice pop of color and heat.

Step 5

Cut the Vienna sausages into manageable pieces. Slicing them lengthwise into three segments works well. You can also score them slightly to help them absorb more flavor.

Step 6

Finally, rinse the bean sprouts thoroughly under cold water. Drain them very well using a colander or a salad spinner. Excess water will make the stir-fry soggy, so getting them as dry as possible is crucial for a crisp texture.

Step 7

Heat the chili oil in a wok or large pan over medium-low heat. Add the minced garlic and stir-fry until fragrant, being careful not to burn it. This infuses the oil with delicious garlic aroma.

Step 8

Once the garlic edges start to turn translucent, add the sliced Vienna sausages. Cook them until they are lightly browned and slightly rendered.

Step 9

When the sausages are nicely browned, increase the heat to medium-high. Add the sliced onions to the pan and stir-fry for about 30 seconds, just until they start to soften and become slightly translucent.

Step 10

Now, add the drained bean sprouts, sliced red chilies, and the prepared sauce mixture. Stir-fry everything together vigorously for precisely 15 seconds. Overcooking will make the bean sprouts limp, so speed is key here!

Step 11

Immediately remove the stir-fry from the pan onto a serving dish. The residual heat will continue to cook the bean sprouts slightly, keeping them perfectly crisp. Taste and adjust seasoning if needed, adding a touch more soy sauce if it’s not salty enough for your preference.

Step 12

The perfectly balanced salty, spicy, and slightly sweet flavor profile makes this dish incredibly addictive. The bean sprouts, cooked for just 15 seconds, offer a wonderfully fresh and satisfying crunch in every bite.

Step 13

This Sausage and Bean Sprout Stir-fry is wonderfully versatile – enjoy it as a delicious side with rice, a flavorful appetizer with drinks, or even a satisfying late-night snack! Enjoy your meal and stay healthy always! 😀
