Main Ingredients
  • 1 pack Oyster Mushrooms (approx. 200-250g)
  • 1 handful Scallions (approx. 1/4 stalk)

Seasoning Ingredients
  • 2.5 Tbsp Soy Sauce (or 2 Tbsp Korean Soup Soy Sauce)
  • 1 Tbsp Mirin (Rice Wine)
  • 1-2 Tbsp Sugar (adjust to taste)
  • 1 tsp Minced Garlic

Cooking Instructions

Step 1

First, trim the tough ends of the oyster mushrooms and rinse them thoroughly under running water. Gently pat them dry, then tear them by hand into bite-sized pieces (about 3-4 cm). Thinly slice the scallions. You’ll be using these shortly for stir-frying.

Step 2

Heat 1-2 Tbsp of cooking oil in a pan over low heat. Add the sliced scallions and minced garlic. Stir-fry slowly until the scallions turn translucent and the garlic becomes fragrant, creating a scallion-garlic infused oil. This step is crucial for deepening the mushroom’s flavor.

Step 3

Once the scallion-garlic oil is aromatic and lightly golden, add the prepared oyster mushrooms to the pan and increase the heat to medium. Stir-fry the mushrooms until they release their moisture and become tender, which should take about 2-3 minutes.

Step 4

When the mushrooms are partially cooked and softened, add the soy sauce (2.5 Tbsp), sugar (1-2 Tbsp), and mirin (1 Tbsp). Mix everything well to ensure the mushrooms are evenly coated with the sauce. Feel free to adjust the amount of sugar based on the mushrooms’ natural sweetness and your preference.

Step 5

Continue to simmer over medium-low heat for another 2-3 minutes, allowing the sauce to reduce and coat the mushrooms beautifully. Be careful not to overcook, as this can make the mushrooms tough. The dish is delicious served warm, or you can let it cool and store it in the refrigerator to enjoy later.
