Today, I’m sharing a super simple recipe for ‘Mala Mandu Rice’! Mala sauce can be a bit polarizing due to its unique numbing and spicy flavor profile, and some people might not enjoy the aroma. Honestly, I wasn’t always a big fan of dishes with mala sauce myself. But there’s something about it that makes you want to try it again, even if you’re unsure if you’ll like it! So, today I’ve prepared a very easy-to-make Mala Mandu Rice that anyone can enjoy. It’s a delightful fusion of savory dumplings and the addictive spicy and numbing mala sauce, perfect for a quick and satisfying meal.

Ingredients
  • 6 frozen dumplings
  • 50g store-bought Mala Hot Pot Sauce
  • 1 onion
  • 1/3 stalk green onion

Cooking Instructions

Step 1

First, let’s prepare the aromatics. Peel and thinly slice the onion. Finely chop the green onion. If you like, you can also add a little minced garlic for extra flavor.

Step 2

Thaw the frozen dumplings using your microwave. Once thawed, finely chop the dumplings into bite-sized pieces. It’s important to chop them evenly so they cook well and don’t clump together when stir-frying.

Step 3

Heat a frying pan over medium heat and add a generous amount of cooking oil. Add the sliced onion and chopped green onion to the pan. Sauté until the onions become translucent and fragrant. Sautéing the vegetables first will deepen their sweetness and flavor.

Step 4

Once the onions are translucent, it’s time to add the 50g of Mala Hot Pot Sauce. Stir-fry everything together. If you enjoy a spicier, more numbing kick, feel free to add more sauce to your liking! Cook over medium-low heat for 1-2 minutes, stirring constantly to prevent burning and to release the aroma of the sauce.

Step 5

When the vegetables and sauce are well combined and form a flavorful sauce, add the chopped dumplings to the pan. Stir-fry them together for about 2-3 minutes, ensuring the dumplings are coated in the sauce. This will help the dumplings cook through and absorb the delicious mala flavor.

Step 6

Finally, taste and adjust seasoning if needed. Instead of sugar, a little oligodang (corn syrup) can be added to slightly balance the spiciness of the mala and add a nice sheen. Stir everything well to finish. Serve this delicious Mala Mandu Rice over a bowl of warm rice. Enjoy!
