Main Ingredients
  • Pork ribs 500g
  • Apple 1/4
  • Onion 1
  • Green onion 1/2 stalk
  • Beef bone broth 500ml
  • Minced garlic, 10 cloves

Seasoning Sauce
  • Soy sauce 1/2 cup (approx. 80ml)
  • Cheongyang chili powder 1/2 cup (approx. 50g)
  • Plum extract 2 Tbsp (approx. 30ml)
  • Chili powder 2 Tbsp (approx. 20g)
  • Grated pear, 1/2 apple’s worth

Ingredients for Boiling Ribs
  • Onion 1/2
  • Doenjang (fermented soybean paste) 3 Tbsp
  • Grated pear, 1/2 apple’s worth
  • Whole garlic cloves 10
  • Ginger powder 0.5 tsp or 1-inch piece of fresh ginger
  • Coarse salt 0.5 Tbsp

Cooking Instructions

Step 1

Rinse the pork ribs thoroughly under cold water and soak them in fresh cold water for 2 to 3 hours to remove excess blood. Changing the water periodically will help drain the blood more effectively.

Step 2

Transfer the drained pork ribs to a pot. Add the boiling ingredients: 1/2 onion, 1/2 grated pear, 10 whole garlic cloves, 3 Tbsp doenjang, 0.5 Tbsp coarse salt, and 0.5 tsp ginger powder (or a 1-inch piece of fresh ginger). Doenjang helps to remove any gamey smell from the pork.

Step 3

Pour in enough water to cover the ribs completely and bring to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about 40 minutes to 1 hour, until the ribs are tender. If using a pressure cooker, cook for about 20 minutes. Once the pressure cooker starts whistling, reduce the heat to low and simmer for another 10 minutes for extra tenderness.

Step 4

While the ribs are boiling, let’s prepare the delicious seasoning sauce. In a bowl, combine 1/2 portion of grated pear, 2 Tbsp chili powder, 1/2 cup Cheongyang chili powder, 1/2 cup soy sauce, and 2 Tbsp plum extract. Mix well.

Step 5

In another bowl, finely chop or grate 1/4 apple and mix it with 10 cloves of minced garlic. Apples help tenderize the pork ribs and add a subtle sweetness and flavor. You can also use grated pear or kiwi instead of apple for a tender texture.

Step 6

Once the ribs are cooked, drain them in a colander to remove excess fat and then transfer them back to the pot. Spoon the prepared apple and garlic mixture evenly over the pork ribs.

Step 7

Next, pour the prepared seasoning sauce over the ribs, ensuring it’s spread evenly.

Pour in 500ml of beef bone broth. If you don’t have beef bone broth, you can use plain water, but the bone broth will provide a richer and deeper flavor.

Step 9

Slice 1 onion into strips and arrange them on top of the ribs in the pot. Turn on the heat and bring it to a simmer.

Step 10

Simmer over medium heat, allowing the sauce to penetrate the meat thoroughly. Let it cook until the sauce has reduced and thickened.

Step 11

Gently shake the pot or stir occasionally to prevent the sauce from sticking to the bottom and to ensure even coating of the ribs. Continue simmering until the sauce is nicely reduced and coats the ribs.

Step 12

Finally, add sliced green onions on top and let it simmer for a short while longer to finish. The fragrant green onions will add another layer of flavor.
