Spicy Beef and Radish Soup Ingredients
- 400g beef for soup
- 1/3 Korean radish
- 2 green onions
- 1/2 onion
- 2 Cheongyang chili peppers
- 1 handful bean sprouts
- 2 pieces dried kelp (for broth)
Seasoning Ingredients
- 3 Tbsp chili flakes
- 2 Tbsp minced garlic
- 2 Tbsp perilla oil
- Pinch of black pepper
- 2 Tbsp soy sauce for soup
- Pinch of salt
- 1 Tbsp sugar
- 3 Tbsp chili flakes
- 2 Tbsp minced garlic
- 2 Tbsp perilla oil
- Pinch of black pepper
- 2 Tbsp soy sauce for soup
- Pinch of salt
- 1 Tbsp sugar
Cooking Instructions
Step 1
Prepare 400g of beef for soup. If you wish to remove excess blood, gently pat it dry with paper towels. Slice the radish into thin, bite-sized pieces (about 0.5cm thick).
Step 2
Heat 2 tablespoons of perilla oil in a pot over medium-low heat. Add 3 tablespoons of chili flakes and stir-fry to create chili oil. Be cautious as the fumes can be strong! Once the chili oil is fragrant, add the sliced radish and stir-fry until it becomes slightly translucent. Then, add the beef and cook until it’s browned.
Step 3
Roughly chop the 1/2 onion. Slice the 2 green onions diagonally. Finely chop the 2 Cheongyang chili peppers for extra spiciness. (Using a generous amount of green onions will enhance the soup’s refreshing sweetness).
Step 4
Pour about 6-8 cups of water or broth into the pot with the beef and radish. Add 2 tablespoons of soy sauce for soup, 2 tablespoons of minced garlic, 1 tablespoon of sugar, and a pinch of black pepper. Adjust seasoning to your taste with salt. As the soup simmers, skim off any foam that rises to the surface for a clearer broth.
Step 5
To deepen the flavor, add 2 pieces of dried kelp. Let it simmer for about 10 minutes, then remove the kelp to prevent the soup from becoming bitter.
Step 6
Once the soup comes to a boil, add the chopped onion, large pieces of green onion, and chopped Cheongyang chili peppers. Add the handful of rinsed bean sprouts and continue to simmer. (The abundant green onions will add to the refreshing and sweet taste).
Step 7
Simmer until the radish is thoroughly cooked and has imparted its deep, refreshing flavor into the broth. Your Spicy Beef and Radish Soup is ready! It has a rich, spicy taste reminiscent of traditional Korean market soups. The combination of sweet green onions, refreshing radish, and spicy chili oil makes it perfect for a hangover or a hearty meal.
Step 8
This spicy and invigorating soup is perfect for recovering from a night out. Ladle it over a bowl of hot rice for an even more delicious experience! While a mild, clear broth is also lovely, this spicy version offers a unique and captivating flavor. The generous amounts of radish, green onion, and bean sprouts make it an ideal hangover remedy and a truly satisfying dish!
