Spicy Beef and Radish Soup Ingredients

  • 400g beef for soup
  • 1/3 Korean radish
  • 2 green onions
  • 1/2 onion
  • 2 Cheongyang chili peppers
  • 1 handful bean sprouts
  • 2 pieces dried kelp (for broth)

Seasoning Ingredients

  • 3 Tbsp chili flakes
  • 2 Tbsp minced garlic
  • 2 Tbsp perilla oil
  • Pinch of black pepper
  • 2 Tbsp soy sauce for soup
  • Pinch of salt
  • 1 Tbsp sugar

Cooking Instructions

Prepare 400g of beef for soup. If you wish to remove excess blood, gently pat it dry with paper towels. Slice the radish into thin, bite-sized pieces (about 0.5cm thick).

Heat 2 tablespoons of perilla oil in a pot over medium-low heat. Add 3 tablespoons of chili flakes and stir-fry to create chili oil. Be cautious as the fumes can be strong! Once the chili oil is fragrant, add the sliced radish and stir-fry until it becomes slightly translucent. Then, add the beef and cook until it’s browned.

Roughly chop the 1/2 onion. Slice the 2 green onions diagonally. Finely chop the 2 Cheongyang chili peppers for extra spiciness. (Using a generous amount of green onions will enhance the soup’s refreshing sweetness).

Pour about 6-8 cups of water or broth into the pot with the beef and radish. Add 2 tablespoons of soy sauce for soup, 2 tablespoons of minced garlic, 1 tablespoon of sugar, and a pinch of black pepper. Adjust seasoning to your taste with salt. As the soup simmers, skim off any foam that rises to the surface for a clearer broth.

To deepen the flavor, add 2 pieces of dried kelp. Let it simmer for about 10 minutes, then remove the kelp to prevent the soup from becoming bitter.
