After the holiday season, you might have plenty of leftover Neobiani Jeon (a type of savory Korean pancake). Instead of eating them plain, which can get monotonous, let’s transform them into a delicious stir-fry! Inspired by Soya Bokkeum (sausage stir-fry), this recipe uses the leftover Neobiani Jeon for a quick and flavorful dish. It’s perfect as a side dish for rice or even as a delicious snack with drinks.

Main Ingredients
  • 6 Neobiani Jeon pieces (cut into bite-sized pieces)
  • 1/6 Onion (finely chopped)
  • 1/4 Carrot (finely chopped)
  • 2 Tbsp Cooking oil

Spicy and Sweet Sauce
  • 2/3 Tbsp Gochujang (Korean red chili paste)
  • 3 Tbsp Ketchup
  • 1 Tbsp Sugar
  • 1 Tbsp Soy sauce (jin-ganjang)
  • 1/2 Tbsp Minced garlic
  • 1 Tbsp Corn syrup (mulyeot)

Cooking Instructions

Step 1

First, wash the onion thoroughly, peel it, and then finely chop it into small pieces. Chopping the vegetables finely helps the sauce penetrate better and improves the texture.

Step 2

Similarly, wash and peel the carrot, then finely chop it into pieces roughly the same size as the onion. This adds a lovely color, making the dish more appealing.

Step 3

Cut the leftover Neobiani Jeon into bite-sized pieces, about 2-3 cm in size. If the pieces are too large, they might not cook evenly, so aim for a manageable size.

Step 4

Now, let’s prepare the delicious stir-fry sauce. In a small bowl, combine 2/3 Tbsp Gochujang, 3 Tbsp Ketchup, 1 Tbsp Sugar, 1 Tbsp Soy sauce, 1/2 Tbsp Minced garlic, and 1 Tbsp Corn syrup.

Step 5

Using a spoon, mix all the sauce ingredients in the bowl until well combined. Taste the sauce and adjust the seasoning to your preference by adding more sugar, soy sauce, or Gochujang if needed. Remember that the sauce will thicken as it cooks, so you might want to make it slightly less salty than you’d prefer.

Let’s start stir-frying! Heat 2 Tbsp of cooking oil in a pan over medium-low heat. Add the chopped onion and carrot and sauté until the onion becomes translucent and fragrant.

Step 7

Once the onion is slightly translucent and the carrot’s color starts to brighten, add the cut Neobiani Jeon pieces to the pan. Stir-fry everything together until the Neobiani Jeon is nicely browned and cooked through.

Step 8

When the Neobiani Jeon is nicely cooked and browned, pour all the prepared sauce over the ingredients. Stir-fry quickly to ensure the sauce coats everything evenly. Cook until the sauce starts to bubble and thicken, creating a glossy finish. Since there’s no added water, it’s best to cook this over low heat to prevent the sauce from burning.
