Main Ingredients
  • Dried shredded squid 200g

Seasoning
  • Gochujang (Korean chili paste) 1.5 Tbsp
  • Gochugaru (Korean chili flakes) 1 Tbsp
  • Soy sauce 1.5 Tbsp
  • Sesame oil 1 Tbsp
  • Mirin (or rice wine) 1 Tbsp
  • Corn syrup (or rice syrup) 1.5 Tbsp
  • Butter, about 1/2 Tbsp (a little)
  • Mayonnaise 2 Tbsp
  • Toasted sesame seeds 1 Tbsp

Cooking Instructions

Step 1

First, prepare 200g of dried shredded squid. Cut it into bite-sized pieces, about 5-7cm long. If they are too long, they can be difficult to eat, so trim them to an appropriate length.

Step 2

To soften the dried squid, soak it in cold water for just about 3 minutes. If you soak it for too long, all the unique flavor and aroma will be lost, so soaking for a short time is crucial. After 3 minutes, quickly remove it from the water.

Step 3

Now, let’s make the delicious sauce. In a bowl, combine all the seasoning ingredients except for the butter and mayonnaise (Gochujang 1.5 Tbsp, Gochugaru 1 Tbsp, Soy sauce 1.5 Tbsp, Sesame oil 1 Tbsp, Mirin 1 Tbsp, Corn syrup 1.5 Tbsp). Mix them thoroughly with a spoon or whisk until there are no lumps. Properly mixing the sauce ensures it coats the squid evenly later.

Step 4

Drain the dried squid that was soaked in cold water using a colander, and squeeze out as much moisture as possible. If there’s remaining water, the sauce can become diluted or the stir-fry can turn mushy, so pressing it with your hands to remove excess water is important.

Step 5

Pour the prepared sauce into a pot or pan and place it over medium heat. Once the sauce starts to boil, let it simmer for about 30 seconds to 1 minute. Pre-boiling the sauce allows the ingredients to meld together better and deepens the flavor.

Step 6

When the sauce comes to a gentle boil, add about 1/2 Tbsp of butter to enhance the aroma and immediately turn off the heat. As the butter melts, it adds a savory richness, elevating the flavor of the stir-fried squid.

Step 7

With the heat turned off, add the squeezed dried squid to the pot. Gently mix it with a spatula or spoon, like tossing, to prevent clumping. The key is to mix thoroughly so the warm sauce evenly coats the squid.

Step 8

Finally, add 2 Tbsp of mayonnaise for a smoother texture and savory taste, and 1 Tbsp of toasted sesame seeds to double the nutty flavor. Mix again thoroughly. It’s best to add the mayonnaise after turning off the heat, as adding it too early can cause it to clump.

Step 9

Once all ingredients are well combined, transfer the delicious stir-fried dried shredded squid to a pretty serving dish. It’s ready to be enjoyed, and everyone at the table will love it!
