  • Fresh perilla leaves (깻잎)
  • Savory perilla oil (들기름)
  • Crispy cabbage
  • Flour (for cleaning)
  • Soju (for removing odor and cooking)

Amazing Dakgalbi Sauce
  • Fine chili powder 10 Tbsp
  • Regular chili powder 1 Tbsp
  • Corn syrup 3 Tbsp
  • Sugar 2 Tbsp
  • Black pepper powder 1 Tbsp
  • Curry powder 5 Tbsp (for extra flavor!)
  • Minced garlic 3 Tbsp
  • 1 Onion (pureed)
  • Ginger 1/2 Tbsp (minced or pureed)
  • Mirin 2 Tbsp
  • Soy sauce 10 Tbsp
  • Salt 1 Tbsp
  • Soju 1 cup (180ml)

Cooking Instructions

Step 1

In a bowl, place the thoroughly cleaned chicken gizzards. Sprinkle generously with flour to remove any remaining odor and impurities. Now, knead the gizzards vigorously, as if you’re washing laundry, to thoroughly clean every part. This process effectively removes impurities and unwanted smells from the chicken gizzards.

Step 2

Rinse the gizzards cleanly and drain them. Your delicious chicken gizzards are now ready for stir-frying.

Step 3

Heat a pan and add a moderate amount of the prepared chicken gizzards. Pour in about 1/4 cup of soju to help eliminate any gamey smell. This is effective in neutralizing the unique odor of chicken gizzards.

Step 4

Cook the chicken gizzards over medium heat as if boiling them. Boiling them with soju further reduces any fishy smell, allowing you to enjoy a cleaner taste.

Step 5

Once the chicken gizzards are slightly cooked and their surface turns white, carefully discard the soju liquid accumulated in the pan. This step effectively removes the gamey odor.

Step 6

Shred the cabbage and remove the stems from the perilla leaves, then cut them into large pieces. (You can add onion for extra flavor if you like!) Add the stir-fried chicken gizzards, cabbage, and perilla leaves to the pan.

Step 7

Now it’s time to add the delicious seasoning! Add the pre-made Dakgalbi sauce (or a store-bought Dakgalbi sauce) and a generous amount of savory perilla oil for added richness.

Step 8

Stir-fry everything over high heat until well combined. Be careful not to burn the ingredients and keep stir-frying without stopping.

Step 9

Chicken gizzards require a bit longer cooking time than other meats to become tender and delicious. They will start to curl as they cook; continue to cook them a bit longer. They might seem tough initially, but thorough cooking brings out their delightful chewiness.

Step 10
