Main Ingredients
- Pork (Pork belly or shoulder recommended)
- 1 Onion
- 1 Green onion
- A handful of glass noodles
- 1-2 Cheongyang peppers (adjust to taste)
- 1 Tbsp Minced garlic
- 1/2 cup Water
Sauce
- 2 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Corn syrup (or other liquid sweetener)
- 2.5 Tbsp Soy sauce
- 2 Tbsp Sugar
- 2 Tbsp Gochugaru (Korean chili flakes)
For Marinating
- 2 Tbsp Soju (or rice wine)
- A pinch of Black pepper
- 2 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Corn syrup (or other liquid sweetener)
- 2.5 Tbsp Soy sauce
- 2 Tbsp Sugar
- 2 Tbsp Gochugaru (Korean chili flakes)
For Marinating
- 2 Tbsp Soju (or rice wine)
- A pinch of Black pepper
Cooking Instructions
Step 1
About 30 minutes before you start cooking, sprinkle the pork with 2 Tbsp of soju and a pinch of black pepper. This helps to remove any gamey odors and tenderize the meat. Marinating it during this time will allow the flavors to deepen.
Step 2
Soak the dried glass noodles in cold water for at least 30 minutes until they are thoroughly softened. Pre-soaking them like this will ensure they have a chewy texture when stir-fried with the pork later.

Now, let’s prepare the vegetables. Slice half of the green onion thinly to release its aroma, and slice the other half diagonally for garnish. Thinly slice the onion into strips, and finely chop the Cheongyang peppers. (Optional: If you have carrots, slice them thinly or into strips.)

Discard the soju from the marinated pork. First, add the sliced onion, 2 Tbsp of sugar, and 2 Tbsp of gochugaru to the pork and mix well with your hands. This initial marination helps the meat become more tender and absorb flavors better.

Now, add all the remaining sauce ingredients (2 Tbsp gochujang, 2 Tbsp corn syrup, 2.5 Tbsp soy sauce) and mix everything thoroughly with the previously added seasonings. Ensure the sauce is evenly distributed throughout the pork; this is key for great flavor!

Heat a pan with a generous amount of cooking oil over medium-low heat. Add the finely chopped green onion and 1 Tbsp of minced garlic. Slowly stir-fry until the oil is fragrant. Once the aroma of the green onion and garlic is strong, add the sliced carrots (if using) and stir-fry briefly. Coating the carrots in the oil will give them a beautiful color and a slightly softened texture that tastes great.

When the pork is about 60% cooked (its surface has turned white), add 1/2 cup of water. Bring it to a simmer over medium heat and let it cook until the sauce reduces by about half. This simmering process allows the sauce flavors to deeply penetrate the meat.

When the sauce has reduced to about half its original volume, add the pre-soaked glass noodles, diagonally sliced green onion, and chopped Cheongyang peppers. Stir everything together until well combined and continue to cook. The glass noodles will absorb the delicious sauce, becoming even tastier!
