Seasoning Ingredients
- 1.5 Tbsp gochujang (Korean chili paste)
- 1 Tbsp gochugaru (Korean chili flakes)
- 4 Tbsp soy sauce for braising (or regular soy sauce)
- 3 Tbsp oligo syrup (adjust sweetness to taste)
- 1 tsp sugar (optional, for extra sweetness)
- 1 tsp minced garlic
- 1 tsp sesame oil
- 1 Tbsp toasted sesame seeds
- 2 Tbsp sunflower oil (or vegetable oil)
- 1.5 Tbsp gochujang (Korean chili paste)

Cooking Instructions
Step 1
First, peel the potatoes and cut them into bite-sized cubes. Avoid cutting them too small, as they might fall apart during cooking. Aim for a consistent, manageable size.

Rinse the cubed potatoes under cold water to remove excess starch. This step helps prevent the potatoes from becoming mushy and keeps them looking neat. After rinsing, drain them thoroughly in a colander.

Dice the onion into cubes similar in size to the potatoes. The onion will add a wonderful sweetness to the braised dish.

Now, let’s make the delicious seasoning. In a bowl, combine 1.5 Tbsp gochujang, 1 Tbsp gochugaru, 4 Tbsp soy sauce, 3 Tbsp oligo syrup, and 1 tsp minced garlic. Mix well. I personally like a bit more sweetness, so I added 1 tsp of sugar, but feel free to adjust the sweetness level to your preference.

Heat 2 Tbsp of sunflower oil in a pan over medium-low heat. Add the chopped green onion and stir-fry for about 1 minute until fragrant, creating a flavorful green onion oil. This infuses the dish with extra aroma.

Once the green onion oil is ready, add the drained potatoes to the pan. Increase the heat to high and stir-fry for 5-7 minutes until the potatoes start to look slightly translucent. Sautéing them in oil at this stage helps coat them, which reduces crumbling and gives them a pleasant texture.

When the potatoes are partially cooked, add the diced onion and sauté until it becomes slightly translucent. Be careful not to overcook the onions at this point.

Pour in all the prepared seasoning mixture. Add about 100ml of water to the bowl used for the seasoning, swirl to rinse out any remaining sauce, and pour it into the pan. Stir everything together to combine, then reduce the heat to medium-low.

Braise the potatoes over medium-low heat for about 5 minutes, stirring occasionally. Cook until the potatoes are slightly tender but still have a slight bite (al dente).

When the potatoes are about 70% cooked, cover the pan and continue to braise for another 5 minutes. Stir once midway through to ensure the seasoning is evenly distributed. After stirring, cover again, turn off the heat, and let it steam for 1-3 minutes. This allows the flavors to meld and the potatoes to absorb the sauce.
