Spicy and Sweet Braised Shishito Peppers with Anchovies

Main Ingredients
  • 3 handfuls Shishito peppers (approx. 150g)
  • 2 handfuls dried anchovies for broth (approx. 50g)
  • 2 handfuls whole garlic cloves (approx. 100g)
  • 2 handfuls mushrooms (approx. 100g)
  • 2 handfuls onion (approx. 100g)

Seasoning
  • Soy sauce 1/2 cup (100ml)
  • Olive oil 1 Tbsp (15ml)
  • Gochugaru (Korean chili flakes) 1 Tbsp (10g)
  • Water 1 cup (200ml)

Cooking Instructions

Step 1

First, wash the shishito peppers thoroughly under running water and remove their stems. For the dried anchovies, remove their fins and innards. Wash the mushrooms and slice them into bite-sized pieces. Peel and wash the whole garlic cloves, and peel and wash the onion, letting them sit briefly to drain.

Step 2

In a pot, combine 1/2 cup of soy sauce and 1 cup of water. The ratio of soy sauce to water should ideally be 1:2. Add 1 tablespoon of olive oil and 1 tablespoon of gochugaru, stir well, and bring to a boil over high heat.

Step 3

Once the seasoning mixture starts boiling, add the prepared anchovies first. Gently press them down so they are submerged in the sauce.

Step 4

After the anchovies have cooked for a bit, add the shishito peppers and whole garlic cloves. This allows the crispiness of the peppers and the aroma of the garlic to infuse into the broth.

Step 5

Finally, add the mushrooms and onion. Gently stir everything in the pot to combine the ingredients well. Reduce the heat to medium-low and let it simmer for about 10 minutes until the sauce thickens slightly, and your delicious shishito pepper and anchovy braise will be ready.
