Spicy and Savory Braised Tofu (Dubu Duruchigi)

Today, we’re making a dish called Dubu Duruchigi. This is my first time making it, and it turned out incredibly delicious! If you ever thought, ‘How tasty can tofu really be?’, you absolutely must try making this recipe.
Main Ingredients
- 1 block of firm tofu (approx. 300-350g)
- 1 medium onion
- 1/2 large green onion (scallion)
- 600ml anchovy and kelp broth
- Salt to taste
- A pinch of black pepper
Seasoning Sauce
- 1 Tbsp gochujang (Korean chili paste)
- 3 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp soy sauce
- 2 Tbsp fish sauce (anchovy extract)
- 1 Tbsp sugar
- 1 Tbsp mirin (or cooking wine)
- 1 Tbsp sesame oil
- 1 Tbsp minced garlic
- 1 Tbsp gochujang (Korean chili paste)
- 3 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp soy sauce
- 2 Tbsp fish sauce (anchovy extract)
- 1 Tbsp sugar
- 1 Tbsp mirin (or cooking wine)
- 1 Tbsp sesame oil
- 1 Tbsp minced garlic
Cooking Instructions
Step 1
First, slice the block of tofu into 1cm thick pieces. Slice the onion into thin strips and the green onion diagonally. If you like it spicier, you can also add 1-2 chopped Cheongyang peppers (Korean chili peppers) at this stage.
Step 2
Gently pat the sliced tofu with paper towels to remove excess moisture. This helps the tofu absorb the sauce better and prevents it from breaking apart. Lightly season the tofu with salt and pepper for a subtle base flavor.
Step 3
Now, let’s make the delicious seasoning sauce! In a bowl, combine 1 Tbsp gochujang, 3 Tbsp gochugaru, 2 Tbsp soy sauce, 2 Tbsp fish sauce, 1 Tbsp sugar, 1 Tbsp mirin, 1 Tbsp sesame oil, and 1 Tbsp minced garlic. Mix everything thoroughly until well combined. This is the golden ratio for the sauce!
Step 4
In a wide pot, spread the sliced onions evenly on the bottom. Arrange the prepared tofu and green onions attractively on top of the onions. Spoon the prepared seasoning sauce evenly over the tofu. Lastly, carefully pour in 500-600ml of anchovy broth around the edges of the pot. You want the liquid to mostly cover the ingredients.
Step 5
Cover the pot and bring it to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about 10 to 15 minutes. When the sauce has thickened slightly and the tofu has absorbed the flavors, your delicious Dubu Duruchigi is ready! It’s incredibly tasty served over warm rice.
