Main Ingredients
  • 500g pork hind leg, cut into bite-sized pieces
  • 1/4 head of well-fermented kimchi, chopped
  • 1 block (approx. 300g) firm tofu, sliced
  • 1 stalk green onion, diagonally sliced

Cooking Instructions

Step 1

Place the chopped kimchi generously into a pot. Using sour kimchi will add a deeper flavor.

Step 2

Add the thawed pork hind leg pieces on top of the kimchi.

Step 3

Drizzle with 1 tablespoon of sesame oil and stir-fry the pork and kimchi together until they are well combined. Sauté until the pork is lightly browned and the sourness of the kimchi mellows.

Step 4

Add 1 tablespoon of sugar to balance the kimchi’s tanginess and enhance its umami flavor, then stir-fry for another minute.

Step 5

Now, add 1 tablespoon of minced garlic for aroma and stir-fry for about 1 minute until everything is well mixed. You’ll start to smell a wonderful savory aroma.

Once the pork is partially cooked, pour in 1.2 liters of water and bring it to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about 10 minutes, allowing the flavors of the kimchi and pork to meld.

While the stew is simmering, slice the tofu into large pieces and cut the green onion diagonally. You can also add sliced chili peppers for extra spice if desired.

When the broth has developed a good flavor, add 2 tablespoons of salted fermented shrimp (saeujeot) for an extra layer of umami. Saeujeot is one of the secrets to a rich kimchi stew.

Step 9

Taste the stew and adjust the seasoning with salt if needed. Start by tasting with the saeujeot, as it might be salty enough on its own. Add salt gradually to reach your preferred taste.

Once the seasoning is correct, carefully add the prepared tofu and green onions to the pot.

Let the stew simmer for another 5-10 minutes after adding the tofu and green onions. Cook until the tofu has absorbed the broth and the aroma of the green onions has permeated the stew. Your delicious pork kimchi stew is now complete! Enjoy it with a warm bowl of rice.
