Cooking Instructions
Step 1
First, rinse the soybean sprouts thoroughly under running water. Avoid washing them for too long to prevent any ‘bean sprout’ smell.
Step 2
Pour 500ml of kelp broth into a pot, enough to cover the rinsed soybean sprouts. Cover the pot with a lid while boiling to keep the flavors in and prevent any unpleasant smell.
Step 3
Once the soybean sprouts begin to cook, add the seasoning ingredients: 1 Tbsp red pepper flakes, 1/2 Tbsp minced garlic, 1 Tbsp salt, 1 Tbsp anchovy sauce, 2 Tbsp soy sauce for soup, and a pinch of black pepper. It’s best to taste and adjust the seasoning as you go, rather than adding it all at once.
Step 4
Add the chopped green onion to enhance the aroma.
Step 5
Add the spicy green chili pepper for that fiery kick. Feel free to add more if you prefer a spicier broth.
Step 6
Add the sliced onion to bring a touch of sweetness and refreshing quality to the broth. Onions also help make the soup clearer.
Step 7
Finally, add the tofu cubes for a soft texture. Add the tofu towards the end, as it can crumble if overcooked.
Step 8
For the final touch, adjust the seasoning with 1 Tbsp of salted fermented shrimp for an even deeper and more refreshing taste. Taste and check the seasoning one last time after adding the shrimp paste.
Step 9
Simmer for a little longer until all the ingredients meld together. Your spicy and refreshing soybean sprout soup is ready! Enjoy this warming soup, perfect for a hangover or with a bowl of rice. Enjoy your meal!
