Seasoning and Broth
  • Kelp broth 500ml (Using anchovy-kelp broth will add deeper flavor)

  • Minced garlic 1/2 Tbsp (Garlic aroma makes the soup refreshing)

Cooking Instructions

Step 1

First, rinse the soybean sprouts thoroughly under running water. Avoid washing them for too long to prevent any ‘bean sprout’ smell.

Pour 500ml of kelp broth into a pot, enough to cover the rinsed soybean sprouts. Cover the pot with a lid while boiling to keep the flavors in and prevent any unpleasant smell.

Once the soybean sprouts begin to cook, add the seasoning ingredients: 1 Tbsp red pepper flakes, 1/2 Tbsp minced garlic, 1 Tbsp salt, 1 Tbsp anchovy sauce, 2 Tbsp soy sauce for soup, and a pinch of black pepper. It’s best to taste and adjust the seasoning as you go, rather than adding it all at once.
