With snow crabs in season, there’s no better time to enjoy this must-have dish! This spicy and refreshing kkotgetang, made with plump snow crabs and cooling radish, is incredibly satisfying. It’s a perfect meal to gather your family around.
Main Ingredients
- 5 fresh snow crabs
- 1/4 Korean radish (about 200g)
- 1/2 onion
- 1 stalk green onion
- 1 red chili pepper

It’s great to buy snow crabs in bulk, clean them, and store them in the freezer. This way, you can easily use them for kkotgetang or even ramen whenever you crave them. Choosing fresh crabs is key to a delicious stew.

Using a brush or the crab’s shell, thoroughly scrub the crab from legs to body to remove any dirt or debris. Brushing helps to clean it thoroughly without causing damage.
Step 4
Open the top shell and remove the hard middle part. Carefully scoop out and discard the gills (the feathery parts) and any remaining innards (the yellow substance). Also, check for and remove the stomach sac. Cut the crab into bite-sized pieces, usually in half.
Step 5
In a pot, add thinly sliced radish and 5 cups of water. Mix in the gochugaru, gochujang, soy sauce, and minced garlic. Stir well until the seasonings are fully dissolved and combined. Pre-dissolving the seasonings like this helps create a deeper broth flavor.

Add the prepared snow crabs to the pot with the dissolved seasonings. Bring to a boil over high heat. Wait until the broth starts bubbling vigorously.

While the crab is cooking, slice the red chili pepper diagonally and cut the green onion into large pieces. Slice the onion into strips as well. The colorful red chili, aromatic green onion, and sweet onion will add wonderful depth to your kkotgetang.

Once the broth is boiling rapidly, add the sliced green onions first. This allows their refreshing flavor to infuse into the soup.
